I LOVE smoked lamb. I think you made a mistake by chopping them pre-smoke. In my experience, seasoning, then smoking the whole rack, THEN reverse searing leads to a much more tender lamb with a fantastic crust! But either way, lamb is something that most people are missing out on! Thanks for making this video.

Fred, Thanks.. the lamb was even better than I expected! The book distributors are working out some kinks right now.. hopefully we'll have books soon and I'll be able to make those available.

Love the idea of bringing in the grates to keep the smoker warm. Do you rub both sides?

Just rubbed the top side this time. Probably could have done both sides but I wanted to make sure they weren't over salted.
