In this ep, Molly is joined by her good friend, fellow sando enthusiast, Declan Bond. Declan and Molly are the hosts of a sandwich obsessed podcase called The Sandwich Universe in which they deep dive into classic American sandos of all sorts. Ingredients :
PRODUCE
1 small red onion or 1 medium shallot
2 celery stalks
½ cup dill leaves, plus more for serving
1 lemon
1 medium ripe tomato
PANTRY
2 5-ounce ounce cans oil-packed tuna
4 baby dill pickles
1/3 cup plus 2 tablespoons mayonnaise
4 teaspoons Dijon mustard
2 tablespoons dill pickle brine
1 tablespoon hot sauce, or more to taste
Kosher salt; freshly ground black pepper
2 slices rye bread
DAIRY
6 ounces extra sharp cheddar cheese

I make this at least once a week from an Instagram live Molly did a year or so ago. My three year old is obsessed with this tuna salad. Eats it by the spoonful, actually. And my son’s name is Declan… so this feels like a full circle moment for me rn

@@jessie551 I’m sure it’s fine. Kosher salt is lower sodium than table salt. Few people know this.

@@travixx07 Thank you, it all makes sense now. To be precise: salt is salt, kosher salt is not “low sodium” at all, but the crystals are bigger and not as dense as the table salt granules: a tablespoon of table salt weighs about 24 grams or so, and a tablespoon of kosher salt only 12 to 15 grams. Don’t quote me on the exact numbers, but this is the main difference between kosher salt and table salt (there are others, but they’re not relevant for this). So when Molly throws fists full of kosher salt into the pot, she is actually using a lot less than many of us think. I honestly thought she was trolling. Mystery solved. This is particularly confusing to Europeans, because while flaky salt or salt in larger crystals is avaible here, it’s usually not sold as “kosher salt”.

Eating this right now! I realized last minute I didn't have any dill pickles (?!?!?!?) so had to do with sweet relish instead =( I burt the bread but somehow it was still crazy delicious and I know it will be even more so with the right pickles and no burning next time. This is definitely going into my normal lunch rotation.

Just made this, never had a tuna melt before! Made it with brioche buns and onions, pickled onions, fresh jalapenos, big chunky celery and pickles, mayo and sour cream! Excellent, will make it again and again!

I always get water packed tuna because that way I can give a little to my cats before putting the rest in the bowl to prep. Treating them brings me as much joy as the sandwich brings me lol

That looks so good! A counterintuitive idea is to make a thinner layer of tuna, but put 2 types of cheese (like mozzarella and sharp cheddar), each one on top of their respective side of the bread. So it ends like bread, cheese 1, tuna salad, cheese 2, bread.

Pro (well, amateur) tip: Give the cheese a head start by lightly toasting the side of the bread that's touching the cheese

If you run your knife through the tuna salad you will get that Deli Pâté eventually. Yes, dump the Tuna Salad onto the cutting board and keep chopping. You really don't want celery, onions or other ingredients for a Tuna Melt. A Tuna Melt should basically be Tuna + Mayo + Cheese and cook it like a Grilled Cheese Sandwich. You want the sandwich to be warm and heated through. Serve with French Fries and a pickle on the side. All these other things are not Tuna Melts. That being said... do whatever y'all want.

I always shred my extra sharp cheddar for my tuna melts so I don’t risk the cheese not melting. I also will do cheese over and under the tuna. Cheese is life!!!

In case no one else answers ... no need to drain when it's packed in oil, especially olive oil. Just mix the oil in with the mayo. Delicious. Also I find that because of the oil, I use less mayo.

@@christophergrote1749 You're welcome. Something I do differently is make a grilled cheese, then add the tuna at the end, because I don't like the tuna to heated. Hot tuna doesn't appeal to me.

I usually drain it and reserve it. Then I can add some back in to control flavor, richness, moisture, and mouthfeel or “unctuousness.” Could also save some to make a more savory vinaigrette or as an oil to flavor croutons.

Jazzed up tuna melt with the extra vegetables and condiments, or just plain tuna + cheese, not inferior just different. Sometimes you just want the pure flavour of tuna + cheese in a crispy buttery vessel.

Cultured butter is NEVER wrong. Use it at every available opportunity. If you've never had it, or can't get it easily, then try it raw first, because the differences are more pronounced. But if it's regularly in your supermarket, use it ALL THE TIME.

Pro-tip: use a pastry cutter to mash your tuna / chicken / egg / crab salad. It produces such a lovely texture and in terms of tuna, gives it that almost pâté consistency you’re after!

Pretty much how I make my tuna salad. When I make a melt, though, I like to sear the tuna salad directly in the pan on both sides, like a patty or even like a hash, and then put it in the sandwich. Then you have a nice, crispy caramelized flavor throughout. A variation is to lay down some finely sliced onions and press the salad onto it to sear them, then flip and sear and add to bread and grill. Also helps with melting the cheese.

Not sure if you live near a Trader Joe's but when I lived near one I used to buy tuna in a can packed in olive oil. I can not remember exactly but it was like 3$ a can at least a year ago. Cool last name.😀

Try adding bacon lardons to the tuna salad, and then flash-heating thin tomato slices in the bacon grease, then gently laying the tomato slices on the tuna before the cheese.
