Such a humble man. ( Don't know what I'm doing) you are amazing! I'm a southern girl here in the USA, we love our turducken, in our house, we took it a step further. Turkey, duck, chicken, then Cornish hen and quail. Took days to prepare, but we all had fun with it. Dressing on the side. Thanks for the memory! 💞

Well hats off to you, you stuck with it . From boning , buying a second turkey and the make shift scales . If I had to do that on a Christmas morning I just go sod it they can have egg, chips n beans . Fair play to you Keef.

I love that your videos show how things can go wrong, but still turn out just fine. From the cooks perspective I could see a near melt down, but from a viewer standpoint it's entertaining.

When trussing, I put the piled up birds in a large flared bowl, helps put them in the right shape and eases the needlework. Great work Keef, not an easy one!

Whoa, the man deserves a medal decorated with a sprig of holly. 🥳 🐓🦆🦃🍻🎄🇨🇦🙂 Edited to add, we cook a 15 lb turkey for Thanksgiving and Xmas at 30 minutes per lb plus 30 minutes . Covered in two packages of streaky bacon but without stuffing. Been using that formula since 1967, works well. Can't get turkey much smaller than that weight here, which fact has its advantages. 😉

Keef, great effort. Very logical and difficult. Had the same problem myself three Xmas's ago. Then I found my favourite chef Jacques Pepin. On you tube type Pepin debone chicken. Amazing! Best quote "deboning a chicken shouldn't take much more than a minute". I do hope you look.

Birds inside birds date back to the Middle Ages -- and they did more than just three. It's a project I've never been able to convince myself to undertake. Very entertaining to watch someone else doing it instead.

Hey I'm one of those dark meat only people. Fortunately, dark meat people are very rare here. Hey Keef, do you like a nice walk? Nothing better for longevity than a nice, long walk. I used to live in a town of exceedingly rare excellence in America for walks. I used to go for two hour walks most days.

I’ve got to admit that I’ve been have a bit of trouble getting into the holiday spirit. I’m sitting in my Brooklyn apartment, isolating because I’m COVID positive, and, to put a poison cherry on top of this toxic sundae, I have no sense of smell. However, the two of you managed to melt my iceberg of a heart. Thank you. As far as this monstrosity of a holiday centerpiece is concerned, I’ve only had one once, back in the mid-‘90s, and I just remember a lot of duck fat with nowhere to go. My suggestion would be to scrap the ho-hum turkey and chicken, and instead use duck, suckling pig, and salmon. Use your meat glue to Frankenstein a patchwork quilt of the three delectable skins into a symphony of crunch, and arrange the innards in such a away that’s the duck, which can stand up serious cooking is on the outside, the pig gets cooked enough to satisfy the food police, and the salmon stays succulently rare (assuming that your using proper Atlantic salmon, and not that wormy Pacific stuff). I wouldn’t be sure what to call such a Culinary Chimera, but I’m sure that Mrs. KC can come up with something apropos.

I have always thought a Cornish Game Hen would work better than a chicken. What other three bird combos would you consider? Goose, turkey, duck? Pheasnt, chicken, squab?

It seems that everyone I’ve heard who tried chiduckey tried it only once because the outermost bird was dry and over-cooked and the innermost was underdone. I’m sure that it is all a matter of persistence.

Watching you work on your birds I think you have them the wrong way round, you've got to turn them over and bone them from the other side as it were! Apparently there are medieval variants that use a dozen or more birds. Most of them are very small, so it's basically chiduckey with smaller birds added. Since there is no way to practically share the birds, it was obviously more for shits and giggles rather than taste. Sounds pretty disgusting to me.
