I love the tip about taking the chicken and duck skin off. I’m making my first one this Thursday! Also I anticipated the chicken to turkey ratio and actually picked up some Cornish hens. I’m hoping 1 fits nicely but if it needs more I’ll add the 2nd one.

Got the turkey partially de-boned, de-skinned and fully de-boned the duck and chicken (duck breasts were WAY too dang expensive) and brined overnight. Trying a jambalaya rice, shrimp and crawfish stuffing for this bad boy! Thanks for the tips...almost ready to assemble, season and cheesecloth! Then it's on to the Big Green Egg for 12-13 hours with some mesquite and pecan wood!!

Nice video..Have you ever smoked with a pellet grill? I was wondering about a water tray with this method. Tks,Doug

I use a pellet smoker because it maintains temp the best out of all of my machines. I put a small loaf pan of water off to one side or in this case probably going to do both sides and just keep adding more water to them as needed. I’m making a turduken on Thursday!

Nice!!! You got this😁😁. Remember to keep the inside birds small. Mine was way too big🤣🤣🤣. Also consider removing the chicken skin.

@@marcuswenzel45 usually 40 - 50 minutes per pound. You are looking for an internal temp of 165

Hey Jeff. I don't remember but it was WAY too big!! If you have a 12 pound turkey the chicken should be 3- 3.5 pounds
