Yeah but when it goes down the drain it goes back into the system to be treated and reused. Throw it in your flower pot and maybe 25% of that gets evaporated and rains into the ocean. It’s not environmentally wasteful to let water go down the drain, it’s only financially wasteful.

JD it may not be a waste of water to let water go down the drain, but energy is still being used to refilter and process that water.

In India it’s basically roses and sugar. To a westerner it does sound a bit crazy but it’s amazing. It’s used also to draw heat out of the body in Ayurvedic therapies and is thought to sometimes relieve pain. It smells divine n the taste is as beautiful as the smell. In eastern cultures, we use rose a lot. In South Asia alone, rose goes into so many drinks and deserts.

I once summered in Turkey as a kid. At lunchtime, I would run to the bakery for a fresh baked loaf, still hot from the stone oven. My grandmother would spread fresh sweet butter on the sour dough bread and top it with this jam. The sour bread, creamy butter, and sweet roses all conspired to create something indescribable. Like a slice of heaven in my hands! It's one of the happiest memories of my life.
@paveleduard5565

@@kaganhudayar5937 I love that you shared such a wonderful memory :). It reminds me a lot of my childhood, I used to be very poor back then. One of the best ways my grandma used to keep food over the winters was by making jams out of every fruit she would find. Me and my little siblings would go bonkers over it. We would put bread on an iron sheet and keep it on the fireplace until the bread was toasted, then spread some of the jam. For me, as a child, that meant the world. It's the little things that make us happy.

I just finished the third batch! Not with Damascus Rose but with wild beach rose petals. It grows in the dunes of North Sea and it has the same fragrance. The color is stronger though. I did not removed the end of the petals as the flowers have only one row of petals and it would have been too time consuming. And I used lemon juice. I absolutely love your recipe. It is the best jam I ever made. When I was a child we had in the garden a huge bush of Damascus rose and my grandma was making jam and syrup but your recipe is even beyond my childhood nostalgic memories. My kitchen and my hands smell like heaven. The entire process, from picking the petals to putting the jam in the jars was magic.

You can surely find Indian rose petal jam in the UK, which is called "gulkand" and is much healthier because the petals are "sun-cooked" not boiled. But they are too expensive.

@@TFT Gulkand is made from fresh rose petals and rock candy...left to process naturally in the sun...highly beneficial to keep your system cool during summers..it's antibacterial, helps gut bacteria and prevents stomach burn problems, when mixed with milk helps you get good sleep, good for your skin and also helps to energise you...I hope this helped. You can check online for recipes.

@@happybirthday2078 Hi! It's not ready yet, as I just made the starter the night before, so by tonight I should be able to finish the jam. (tho I think I'm going to put a bit without the petals in it, in some small jars for jelly :D) And, I used a similar 'bushy, fluffy' type of rose. Not sure what exactly the name is of them, but as far as I know, almost all roses are edible but like you mentioned, some have more or better fragrance and some are sweeter/tarter than others. The ones I used have a nice strong, sweet scent and a sweet and tangy flavor. It's like they taste how they smell... does that make sense? LoL I've harvested the hips from these bushes for years, because they produce nice fat ones. I just cut the hips in half and use my thumbnail to push the 'fuzzies' and seeds out, then dry them. They store forever! I use them in teas, and muffins and pancakes and salads etc...etc... They taste like a cross between a peach and a tangerine, really yummy!

I've used this recipe several times, and it is so delicious. Sadly I can't get fresh rose petals too easily so I opt for rehydrating dried rose petals, which I thought might not have ended well, but to my surprise, the rose comes through the jam in such a lovely, sweet and fragrant way.

Hello Aysanur! The first time and every summer I came to Turkey, my mother-in-law had a jar of homemade rose petal jam from the roses in her garden. Now that she has passed, there was no rose jam this year. I sadly looked at her roses in the garden with fond memories. Following your instruction, next summer I will try making rose petal jam with her roses. Thank you! MaryAnne Korkut
