I don't know if it's been mentioned but when I want to line up seams or patterns, particularly if the fabric has some stretch, I like to use double sided basting tape. It really helps to keep things lined up.

The hat is cute! Your color blocking is perfect, I know you were annoyed it was slightly off but I don't see it! It looks perfectly matched up to me. I think I would do the brim as 2 layers so it would have more stiffness and I'd do concentric circles of topstitching on the brim, I see a lot of store bought bucket hats that have that detail.

Cute hat! I made one from old jeans using a wedge-shaped pattern, so the hat was more of a bell -- in 1975!! I have an excellent hint for you, regarding sewing over the thick double seams of jeans. BEAT IT WITH A HAMMER. Yes! Place the thick part on a short piece of wooden board , and hit it firmly with a small hammer about 5 or 6 times. It's almost like tenderizing tough meat! You will be shocked at how much easier your needle goes through. Make sure you use a heavy-duty needle, of course. I keep a 10" length of 1" x 4" pine board and a tack hammer in with my supplies in my sewing room. It comes in handy for installing snaps and rivets as well as tenderizing seams, LOL! Keep up your great up-cycling videos! You and your daughter are beautiful souls!
