tons old old recipes, especially various sauces, would use an anchovy filet to add some extra salt and savory-ness. I watch alot of 18th century cooking recipes on the channel "Townsends" and he's used anchovies in a handful of his recipes, so it seems alot more common in his recipes and older dishes like this, but you dont see it as often in modern recipes. I think the reason you dont see it as often is the more modern obsession with bacon or soy to add savory flavors to dishes

I made this recipe the other night, and it was soooooo good! It's amazing how good the clam juice/cherry tomato soup base is. The only thing I did differently was add some canned Cento tomatoes to thicken it a bit, and essentially add more volume because I had more people eating. This is definitely going to be a staple recipe at my house.

I made this last night. Used vine ripened tomatoes and dried herbs (but a significant amount of fresh basil). Also, Tilapia was on sale and shrimp was on hand. It turned out INCREDIBLE. Like, I would order it at a restaurant. This one goes on the good list, possibly even doable at catering scale. Thanks Chef!

I made it! It was even better than I could have dreamed. Absolutely delicious and so easy to make and almost no clean-up! It had all the best things about soup and seafood. Warm, comforting, with a nice seafood taste. It seems very healthy as well. I got to use my new chinoise for the first time to make my cherry tomato puree! Fun! Amazing how it turns from that weird pink foam into a beautiful red and tasty soup. I didn't have clam juice, but "Cambell's Real Fish Stock" worked great (I didn't know if it would be any good).
