Being a dove at home is known to be quite challenging! But if you do this procedure it will certainly be easier, without kneading, just a ladle is enough!
It's a soft dough that, since it's not worked too much, however, needs various growth steps and folds (always done with a ladle) without getting your hands dirty! It's easy to do, it just takes a little patience, but the result will pay off for the wait!
I lightened, as usual, using OIL instead of Butter (a gamble) but I must say that I am very satisfied with the result!
Very light as a cloud and tasty (thanks to the scented orange paste) with a sweeter touch meeting the MARMALADE and CROCCANT above the surface (thanks to the FROSTING)!
⏱️ 2:23 1st Step of growth from about 30-40 minutes (with relative folds)
3:06 2nd step of growth of about 30-40 minutes (with related folds)
4:39 3rd growth step of at least 4 hours (or overnight in the fridge)
6:37 4th Step of growing for about 30-40 minutes (after having made it in loaves)

📝 Ingredients: x 2 COLOMBS
1 Kg of flour 0 (or half Manitoba half common flour 00)
400 g Milk (slightly warm)
15 g fresh brewer's yeast (or 5g dry)
3 eggs
150g Sugar
150 g Seed oil
1 lemon (or orange)
1 pinch of salt
For the aromatic orange paste:
60 g candied orange peel
Peel of 1/2 lemon
3 -4 teaspoons Powdered sugar
FOR THE FROSTING:
100 g almond flour (or ground almonds)
60 g egg whites (about 2)
80 g icing sugar
Sliced almonds
Sugar grain
Whole almonds
Powdered sugar
