When I was a kid my mum used to make sausages in an apple and onion gravy - I love the pear and leek idea! Especially with the ginger.

Leaks are too difficult to clean. Dehydrated chopped onions is a tasty shortcut.

True Bangers are made with ''Rusk'', a special type of bread crumbs, at times more than 20% by weight. Unfortunately, the Rusk was an economic issue first instituted during wartime meat rationing. Onion gravy [apple or pear optional] with smashed potatoes and ''whirled peas'' [rehydrated dried green peas mashed to a thick pulp]. Truly fantastic Pub fare! Blessings.
