Great job! You got me licking my chops! Brisket, a smoked baked potato with butter, a couple of scoops of some good ole baked beans, some greens would be nice as well as some nice hot cornbread with butter and a couple three ice cold Heinekens and well I'm not sure but I think it's heaven! If not in about three or four hours later when I'm taking that nap I'm sure I'll be there then. Then of course when you wake up a couple hours later it's time for a little snack if it's not all gone. And that's a wrap!

I have that same cooker with that same rack and it is awesome awesome awesome awesome I can’t say enough about this Weber Summit charcoal grill there’s nothing that can’t do well nothing is loaded with charcoal set at 2:50 I’ve had a burning up to 21 hours.

I love it, but I still think it's a bit overpriced. If you can find a good deal then go for it. It's the only grill on the market that meets all my criteria and I happen to have the money, but everyone has different criteria and different budget.

EJ Wu how have you found the temps are they easy to keep 250 for low and slow? , i love my kettle grill but the room with the snake isn't enough and it lasts for around 6 hours I'd rather have something that can last 9 maybe 10 I do like my sleep 😂 but it doesn't seem easy to add fuel so 18 hours plus would be nice so I wouldn't have to mess with the deflector plate, can you like my comment if you reply it pops up in my notifications then 👍

@@rscholey85 I have a kettle too (who doesn't?). The WSCG is really good at low and slow. 10 hours is nothing. I haven't done overnight smoking yet but I once forgot to close the vent and didn't realize til next morning. It burned for about 15 hours and was still going when I put it out. The temperature is also a lot more uniform across the grill grate than the kettle.

Hey nice job! Good overall explanation of the steps as well. I also own a Weber Summit Charcoal Grill Center and I love it! Sure, it's pricey but I use it a lot and am getting my money's worth out of it. Did you use a Choice or Prime Brisket? Also, did you have to add water to the pan as the cook went along?

Richard G Hey Richard. 1st off, I’m glad to hear from a fellow summit owner. I to love this grill and feel as if it is one of the best and versatile grill on the market. Pricey but worth every penny especially for those like us who use it frequently. The briskets for this cook were choice, I was unable to find a prime brisket at the local markets in my area. As for the water, i did add water through the cook to keep the Maoist environment during the long cook. I really appreciate you checking out the video. Looking good. I wonder about using the stock stainless grate that came with the Weber. Would the stock grate allow more smoke flow to the surface of the meat? Would the extra rack stay in place ok on the stock grate below? Thanks for sharing. Nice equipment!👍

Kevin Nash The stock grate would definitely allow more air flow. It also works better with the expansion rack. I just love my custom grill grate and wanted to show it off on this cook😉. Thanks for checking out the video Kevin.

love the presentation, and the meat looks great. I just bought a weber summit charcoal grill and am really looking forward to firing it up. Not to be picky, but I do technical writing - you might want to edit your credits, the correct word is "pastime" not "pass time".

Love your Videos! Out of most KZbinrs, you're style is inline with mine. I just got my Weber Summit Grill a few weeks ago. Got the all the Gourmet Attachments for it also. Got a question about the airflow, seems kinda confusing to adjust the bottom and the top vents to get the desired temps you're looking for, definitely not a Set and Forget. When smoking and trying to get 250 degrees, do you typically set the bottom all the way to the left, and a 1/4 inch on the top? Once again, Thanks for the videos and keep them coming!

Andrew Hi Andrew. I generally set the bottom damper to the 1st dot on the left which is the smoke setting. From there I adjust the exhaust on top to 1/4 or 1/2 way open. The real trick is to adjust these settings once your grill gets about 20 degrees from your desired temperature. From there the summit will do the rest. You may have to play with the exhaust initially meaning 1/4 vs 1/2 way open but once set it will hold that emperor the duration of the cook. Hope this helps.

Jeff They did. I believe it has a lot to do with the convection style cooking that the grill gives. The heat seems to disperse very evenly throughout. Thanks for checking out the video Jeff.

This looks awesome. I’m keen to understand if the temperatures held steady the whole time with the same vent settings and nothing to do? No need to clear ash or play with the vents at all? In struggling to get consistent temps with my summit.

I had very little adjustments to do except at the beginning of the cook. I generally shoot to get the grill roughly 20 degrees below my target temp. Afterwards I closer the dampers to the smoke setting and only play with the exhaust until i get to the desired temp. At that time it generally is set it an forget it time. Hope this helps.

Really wish Weber would price this grill better. If the stand alone was $1000 I might have bought it instead of Kamado Joe. Great job on cook.

I hear the 26-inch Weber kettle does just as a good job. Check out "BabyBack Maniac" Video. He does a comparison. $1,500 vs $329 and the 26" has more space as well. You are 100% Right, Weber is using Cheaper materials and Charging us 5xs more than their larger 26" Kettle. Weber needs to get off that high horse they are on.

EL EVO no way is a kettle going to fit more on no matter what size of kettle you pretty much half it due to indirect heat, this is more comparable to a big green egg, I don't see you complaining about their price especially with a table 🤦‍♂️ I would buy this over any kettle or big joe or green egg

I recently found your channel and very impressed with your videos. Nice to see a bbq guy without the bbq hat, t-shirt, and beer gut... Quick question, have you tried the grill extension rack on a 22" Weber kettle? If so does it slide around? I'm thinking that may work for Roadside Chicken rather than spending the money on the expensive Santa Maria attachment.

ThePdxster I haven’t tried the extension rack but it’s a great Ideal. I was excited to buy the Gabby’s Grill Santa Maria attachment because it was very inexpensive as opposed to the true Santa Maria Grill. I loved it so much so sprung for the Santa Maria Grill anyway. I think I have major issues. Lol. Thanks for checking out the video.

Thanks for the reply! I just see the Santa Maria attachment as something that would get limited use so spending $230 for occasionally doing chicken is tough for me to justify. I use my Slow N Sear allot (including tri-tip) and well worth the price, but not doing any wood fire cooking. Like you I would have to buy boxes of expensive red oak sticks. I just found the Smokenator Hovergrill that would give me an extra 4" of cooking height and at $30 it's certainly worth a try just for the Roadside Chicken which came out pretty good with the Slow n Sear (reverse sear with all vents open) but would probably be better cooked 100% directly over the coals.

Jim Provan Hi Jim I find that for low and slow cooks the wax cubes work better as they slow ignite the charcoal to help maintain the life of the fuel. For traditional grilling. The gas starter is what I use. Thanks for checking out the video!!

I’m so On the fence about this grill. I want more smoke flavor then I get out of my pellet grill. And I’m not sure I want to mess with an off set

I promise its amazing! Smoke flavor, convenience, durability, gas assist for quick lighting of fuel, holds temperatures like none other. My favorite of all my grills. If you decide to move forward, definitely spring for the cart version, it opens up a whole new level to the grilling experience. Let me know if you spring for one. Have a good evening.

I can agree more. This grill is fantastic....it not only grills and smokes well but once you get the hang of it temps hold for a very long time. One thing people forget is the fact that it is mobile for it size. I rarely use the snap jet but nice to have as back up.

My man DZ... I have a question. I’m making my first Brisket tomorrow and have a question. Do you recommend I cook it on the Weber Summit with the Diffuser plate or on the Weber Performer with a Slow and Sear. My slow and sear won’t fit in the Summit. Andrew I would definitely cook it on the Weber summit with the diffuser plate and lump charcoal. I would also add a drip pan right over the diffuser plate filled with water to hep keep a moist cooking environment.

I followed your method to the T and it took about 14 hours for a 16lb Brisket on the Summit and it held well at 250° the whole time. My company destroyed the brisket in about 10 min and I was able to get one sandwich for myself. Videos like yours takes good barbecuers to great over night! 😂 Thank you! 👍🏽👍🏽👍🏽👍🏽👍🏽

Jonathan Weeks I wanted to make sure to create the perfect low and slow environment and was worried that the gas assist might reduce the overall life of the charcoal.

Yeah Alex, from what I've seen, you are supposed to turn the point and cut against the grain. Flat was cut correctly. For competition, that meat would have come in last, for family, it would be great!
