The sauce . . . Yup Alexander the Guest would have spat out his drink of Krug if he saw that. But seriously I don't think he understands French cuisine. It is all about perfecting the sauce and harmonizing it with the protein. What he did was like taking a piece of nigiri and picking up the fish without the rice. I do appreciate him trying stuff out of his wheelhouse. If he is still doing these videos years from now, his experience and palette will surely evolve.

FYI, the salmon spread is called salmon rillette... Poached salmon with lemon, herbs, usually butter/sour cream/ mayonnaise or some combination thereof. Basically a better version of butter that you spread on bread as a canape.

UA was served a weird one though, since rillette is a medieval way of preserving meat by coating it in butter, not sure I would want a rillette to be made with mayonnaise. Due to its own overpowering flavor it's hard to elevate mayonnaise in the same way that butter can be elevated. Dishes that are heavy on mayonnaise rarely tend to be more than the sum of their parts whereas herb butters can be fantastically complex. So I can understand why UA was underwhelmed by salmon in mayonnaise.

I went for lunch there in 2015. It was very chic and they gave me a banquette seat table for 2 people which was great. I love that the sommeliers have a wine tasting cup hanging on a chain around their neck!! It was $90 for lunch and the tuna and foie gras was my favourite dish.

In this part of the video when you go to a 1,2,3, star restaurant you are going to pay top dollar especially in the APPLE but all French restaurants are very expensive that's a given. More stars = More money = less food. I've been to MANY Mich star places. One place that has consistently caught my eye is French Laundry in CA. If you watch Anthony Bourdain's trip there, it's a LONG experience with a ton of courses. At this point, I'm basically over Michelin star places. It's SO expensive, and just nuts. Im tired of going to places, + 1500$ later, for 2 people.

I dont think ordering a lunch menu is the best for a place like this. If you are going here you got to go for the $325 pre fixe menu. Yes, its expensive but thats the cost of doing business at a place like this. Do the review when you are ready but do right by them. Going for the lunch menu is equivalent to going to a great steakhouse and getting their smallest steak. Sure you get a snapshot of what its like, but its not like getting a porterhouse or ribeye.

Thanks for taking us to Le Bernardin in New York. I guess the price is on par with any Michelin restaurants in Manhattan. I would like to suggest that you try Les Grands Buffet in Narbonne, France and according to Tim Lee who's a food vlogger, it is the best buffet restaurant in the world. I haven't been there but it is on my bucket list. The price for the buffet is around $70 which is absolutely amazing. One can't possibly eat everything offered in one sitting, so you may have to visit a couple of times or may be more.

Regarding the octopus Id only add that “the usual” menu consists of more dishes (5-/8-/… plus courses) and therefore 5 pieces of the octopus are a perfect amount of food for that starter-dish. If choosing the 3-course-lunch or -dinner this may seem “too scarce” but it is created for those eating the full menu at the restaurant.

Look pretty much only the one percenters can walk in and order whatever they want . Yes the more you spend the higher quality and more choices you’ll have sometimes the only difference is the dishes will have more and higher quality caviar or large fresh slices of the finest Truffles depending on the time of year and season . But even ordering the least expensive Pice Fix lunch menu with choices and only 3 courses should be able to show the quality and presentation and service of a 3 Michelin Star restaurant. You did a fabulous job reviewing especially keeping your head down for the no video or photography rule which makes sense . They don’t want other restaurants copying their signature dishes and plating and garnishment as well as respecting the privacy of their extremely high class under the radar very high net worth and celebrity clientele.

That depends. There are a lot of restaurants dressing up 20$ steaks and charging 100$, so yeah depending on the restaurant there may not be a big difference. But if you know how to cook and educate yourself on the differences in produce and the different cuts there is actually a massive difference between 20$ steaks and 100$ steaks. But a restaurant would charge you 300$ for the latter. I can't imagine not being able to cook.

Most top restaurants won't over-SALT the food because many patrons may have health issues; hence use the salt shaker. Agreed.

Big money small meal. OK if you just want the experience which is valid if you are loaded. If you don't want to leave a restaurant wanting another meal don't bother.

Not accurate. The portions are small individual tastes, but if you have 7 or up to 14 courses sometimes, you’ll be plenty full at the end

Dude went to a fancy upscale restaurant expecting burger king portions. Every one knows you’re paying for the experience not the size of the food. Why he went there I’ll never know. Zhe clearly wasn’t prepared.

Very excited to see that you gave Le Bernadin a try. I went there for lunch a few years ago. I didn’t find it too “stiff”. It looked like it had an older customer base from what I could catch of your video.

I ate at the Fat Duck for my wife's 40th birthday, there were 6 of us and it came to like 2 grand, so not cheap. Was great though - although as usual eventually even the expertly chosen wine just started tasting like wine to me :) the chicken liver parfait was the actual best thing I'd ever eaten. Keep going UA! also why are you called UA?

There is a place in Montreal that's a short plane ride from New York. It's called Au Pied de Cochon. They have amazing food and I am sure you'd love it.

just a heads up, most fine dining dishes with sauces like this are meant to be eaten with spoons so you get the right portions of sauce etc. unless you’re cutting w a knife and fork with a meat dish or heartier dish that needs cutting etc or turning the fork over and using the knife to slick over a puree that is thicker its different. you would get more of the effect a dish is supposed to have using a spoon far more for most dishes in this realm of dining.

IMO the very best and consistent restaurant in Manhattan. The seafood is prepared unlike any other restaurant I have ever been to and the overall experience is hard to equal. I know the $325 tasting menu is steep, but that is really the sweet spot for LeBernadin. Love the squinting UA

Never been there but love the owner (from Bourdain show) but UA must 'save up' for the full course, NOT the lunch special. Once a year or lifetime splurge is no big deal; not eating there on a regular basis.

@@johnc3886 Agreed. I have gone there 4-5 times in my lifetime and I am my mid 60s. (and have lived around NYC my entire life). Since I am now retired, I won't be back given the price point. It's ok though, as I am glad that I actually went when I could. Stay well and best to you and your family.
