I had never considered carbonara udon and at first I thought it was a mistake but the more I think about it, the more I realize it'd have a fantastic texture.

the best thing is. he didn't use cream. i wish he use better meat tho. like tempura bacon. it looks like a SPAM.
If ever I am in Osaka, I would definitely make a point of visiting this chef's restaurant. So many unique and amazing looking udon dishes. It's clear he puts his heart and soul into his cooking

4:03 wow, this guy really pays attention to the ingredients. Salt he was using is produced with seawater using traditional method. It takes a long time to produce this salt.
Japan is a dream trip and I can’t wait to visit Omg , his style of cooking from the heart and presentation is out of this world

If you're referring to 6:16, that is Katsuobushi - made from pieces of Bonito fish which have been cured, smoked, and dried. Afterwards, it is shaved or shredded into flakes. It has a smokey and savory taste that is similar to cured ham. Katsuobushi is frequently used as a basis for Japanese soup stocks.
