When ever I see videos like this I can't help but wonder why the heck all we have here in the west are Sushi! Japan have such a tasty looking Kitchen so why are we only getting this one thing. Would love to try proper Udon and Soba dishes but simple are no Japanese Restaurants that carry it here in Denmark. BUUUUUT we have a TON of Sushi places.

Finally a clean restaurant ! Still wish these places used gloves and hair nets but this one is sanitary!

Doesn’t 7 years in the restaurant industry . Most of the food you consume is prepped with little to no gloves. However hand washing and kitchen safe sanitizer is used to an obsessive amount . Gloves are generally only used when touching things like raw poultry/meat or fish . But most of the time during service we just have specific tools used for only touching/grabbing that specific product . One set of tongs for chicken , another set for beef etc etc

That is the traditional method for kneading the Udon dough. It is believed to result in better gluten development compared to machine produced noodles.
Having your bare hands on cooked food, is not very appealing or appetising

The bowls have already been washed and are clean. The rinsing is used to warm up the bowls before serving, so the food remains hot for a longer period of time.

In Japan, masks have been worn long before COVID-19. It is regarded as a normal sanitary measure and considered a courtesy to others. This has been practiced for over a century.
