Their movements are perfect example of "slow is smooth, smooth is fast". I am sure their years of work has given them the fluidity to their movements, very efficient and not hurried. But they are fast because they are smooth and efficient. They don't have wasted movements. And the food look delicious.

Wow, I've spent what feels like 100+ hours over the past few weeks watching videos like this, and my take away is, there doesn't seem to be a bad Japanese chef, each one of them has made me go "Wow that impressive", in their own unique way, from Street venders to Udon shops, to $300 steak meals, every single Japanese Chef seems to be absolutely outstanding, as well as unbelievably clean, its like a sterilized surgical room. Again, just absolutely outstanding stuff. What a dream to live in beautiful Japan...

Thanks for making the video. Enjoyed it very much. If i was there, would probably ask hundreds of questions. Love the cleanliness and how the food is prepared in such a professional way.

Cooking, running a restaurant has to be your passion or it would get old real quick. A lot of work not knowing how many will come to eat. The patience he has to make those perfect egg sheets over and over without burning the eggs. All the food looks amazing!
