The breading technique is masterful. This is coming from a US Southerner who loves everything battered and deep fried. Those gloves stayed immaculate. If you've ever done it, then you can easily tell that's a professional.

I love how every item is placed precisely with care while my McDonald's sandwich has the burger half off the bun, a splash of sauce in one pile, all the pickles in one stack and my lettuce is brown.

It is very rare for me to say OMG, but I said that (in my head) when I saw the thickness of the pork cutlet. 😂 It is thicker than the bread and looks irresistibly delicious as well. 🤤

Cooking tonkatsu that thick is a bit of good timing. The pork needs to be well cooked but keeping it moist without burning the breading is my problem. Katsudon is my favorite. I wonder if it's on the menu? Excellent cooking.

The Pork is coated in "Nama Panko", Japanese-style breadcrumbs made from fresh, soft Shokupan (Milk bread) that is shredded into flakes. When fried, the result is a lighter and crunchier texture compared to regular breadcrumbs.

That was my first thinking, temperature of the oil is critical to cook the inside of the pork without burning the bread crust. My guess would be around 140 Celsius if it is above 160 I would be very surprised, above 160 would be with double frying method. Regards from France

They sous vide pork before cuting. It made pork in good shape and ensure moisture and texture is optimum.
