The breading technique is masterful. This is coming from a US Southerner who loves everything battered and deep fried. Those gloves stayed immaculate. If you've ever done it, then you can easily tell that's a professional.

Cooking tonkatsu that thick is a bit of good timing. The pork needs to be well cooked but keeping it moist without burning the breading is my problem. Katsudon is my favorite. I wonder if it's on the menu? Excellent cooking.

That was my first thinking, temperature of the oil is critical to cook the inside of the pork without burning the bread crust. My guess would be around 140 Celsius if it is above 160 I would be very surprised, above 160 would be with double frying method. Regards from France
