I'm Asian. 100%. The closest authentic asian supermarket for me is 1 hour away. After all these years I got tired of driving to the market when I have 4 major American supermarkets in my town. I made stir fry out of spaghetti noodles and honestly I wish I have done this sooner! So if you don't have these Asian noodles just use spaghetti or fettuccine noodles! Make sure you have oyster sauce and soy sauce too!

I would add the garlic first with the oil to flavor the oil. Don't worry about burning it since you're adding other items with water to stop the frying/browning of the garlic - noodles, carrots and specially cabbage that's mostly water. The garlic won't burn.

While we have a historic Chinatown that is Asian diverse here in Philadelphia, I am encouraged to use what I have on hand. Totally enjoying my sweet potato noodle dish, heavy with vegetables and very old pork from my freezer. I emptied dregs from maple syrup bottle to round out flavor. Toasted almonds for crunch. Best Asian dish I’ve had in years! Very fast.

Try adding water or wine with garlic it helps to keeping from burning plus reducing the heat and cooking the garlic longer and a rougher chop on the garlic

The organic ones I get from Costco last at least a week in my fridge. The other option could be dried mushrooms. They’re just as good for you if not better since all the water is already out of them. Simply rehydrate before adding.

Every other asian channel i follow when someone asks, they say usual frozen or fresh and they also have the shelf stable ones at World Market and some grocery stores… I think the fresh or frozen have that “chew” or bite factor that people love about udon noodles… Do you live anywhere near an H-Mart? Korean grocery stores… they have tons of noodles…

Well done you give us best examples. Sometimes I get them in my hand & don't know what to do. Stir fry is far away from my culture. We ( Turkish & Greeks only eat one dish at a time. Like Mezze or tapas style. My parents if alive , never accept to mix the vegies ever together with a carb never. but I love. Practical & quick and get all the nutrious in one go.. Also most in that region won't taste noodles . Its may be last 10 years we met with Asian chefs & love their food but only young people went home and tried this lovely food. Second handycup with Asian food is too salty. Middle age people can't coop with that much food. But I love & thank to you. 🍜❤
