"i've only cooked for the 1 percent my entire life, and in the end it felt empty" what an inspiring talk. thank you. i loved hearing about how the landlord decided to be supportive after seeing the humanitarian work Humm and others were doing. kindness and charity really are viral. it's a thought that keeps me going, how infectious goodness is. you never know who you're going to reach and the change they could enact.

we do know why we eat turkey on thanksgiving,(do a quick google search) its dry because home cooks aren't chefs but they can learn if they are motivated to do so. Turkeys come from turkey farms, like corn comes from corn farms, so why must there be a problem? . ..if someone is confused in a dairy aisle it is because they didnt know what they wanted BEFORE entering the dairy aisle. There are many dairy and non-dairy options and this is GOOD thing. People absolutely know that milk can be part of their "healthy" diet and any concerns about its climactic impact can be easily researched that day. I'd be interested to know which ingredients have just "gone missing" from the supply chain and what the explanation is as to why they no longer taste a certain way, the most obvious explanation would be a changing methods on the part of the farmer We arent running out of resources, we would need 3x planets in 2050 IF no new knowledge was created. Humans turn things not considered resources in to resources. We are all pro-planet. Cooking vegetables is amazing, but why doesnt eating any meat support longevity? Technological solutions through creating new knowledge to problems that will inevitably arise for eternity is the most important thing we can do, not changing what we put on our plates. Not all caviar is farmed in tanks in the middle of a desert somewhere. It takes crazy courage to re-open as plant based and its great to see what will come out of this and seeing all ingredients as potentially luxurious is quite useful and hopefully all chefs will benefit . You would have to find a strange definition of "healthy" that would support the sentence, "eating meat is not healthy". i think its very misleading to tell people this, because it is not true for everyone. there are more than 5 meat options to serve as an entree if you choose to. just some notes as i watched. up for debate. i used to work for him and it was a great experience, i have a lot of respect for what he is doing and applaud the effort, its nice to see a big chef doing something different, the philosophy driving it just seems a bit confusing.

The philosophy is not too confusing once you fully understand the climate and health impacts of our current food system. Takes a while to untangle from the web of “conventional thinking” and begin reasoning scientifically

"conventional thinking" says to stop eating meat ..in my opinion. Scientific reasoning would lead you to an extremely large range of solutions that also allow people to continue eating meat while solving the problems that exist now and in the future.@@AaronCunningham
