For instance…if there is a carbohydrate “IN THE MEAL” (like potatoes) there is little reason to add more carbohydrate by way of bread. I was very surprised to see a fish and chip shop on holiday in Canada on the shores of Lake Huron - thinking we were so far from the sea that the fish would just be frozen sea fish. But no, it turned out the fish was a large freshwater fish (whitefish or walleye, I think) fished freshly from Lake Huron. It was really good with a texture and flavour not unlike cod or haddock. And the chips were real British-style ones too!

Brit here - 'foreign people' do eat fish that isn't deep fried regularly. Battered fish like this is usually a treat, often on a Friday. Also, it's often served with salt and vinegar, lemon, mushy peas, and/or tartare sauce. I've only rarely eaten fish and chips without any sauce or accompaniment.

I think that there is a chef that makes the different dishes. However, a lot of times, things get lost in translation - or some ingredients are intentionally left out. For example - one time they prepared BLT sandwiches - but switched some kind of beef for the bacon (due to the illogical superstition about pork). You cannot have a BLT without bacon.....that is just wrong ! I know it is against their religion - but if I cooked for them.....I would try to sneak it in !!

Back in 1970 or so, a chain known as "Chesley Fipps" fish and chips became popular. I would drive down and pick up my families order usually. Sometimes someone else would go instead of I. Turns out the family said it tasted better when I picked up the order. I figured out later that the very British girl was saying" malt vinegar with that?". I had no idea what she was saying, due to her thick accent, so I said "yes" each time. Malt vinegar is the way to go!

In Great Britain they put Malt-Vinegar on their Fish and Chips. In America we put Tartar Sauce on the fish, and catsup on the chips. In Europe they put Mayonnaise on both. NOTE. "Tartar Sauce" is a mixture of Mayonnaise and chopped sweet pickles. NOTE. "Mayonnaise" is made from whipping raw eggs with melted Ghee until the mixture turns thick and white and fluffy.

It is traditional, but I wouldn't say very traditional. It's not more than 150 years old really and the fish in batter is originally Sephardic Jewish in origin, so I've heard, so the idea originates I expect in Spain. Deep fried potato has probably been around a lot longer in the UK

This dish originated in England (Great Britain), where they call fried potatoes "Chips". In the US we would call fried potatoes "French Fries" but more specifically the "Chips" served in the "Fish & Chips" dish, would be closer to what we in the US call "Steak Fries". They are bigger and thicker cuts of potatoes, compared to our normal "French Fries" People here love to dip their "Chips/Fries" into sauces.. like Catsup, Mustard, BBQ Sauce, Honey, and Ranch Dressing, just to name a few.

I see from the thumbnail that it’s not proper fish and chips. Gotta have chunky chips (bot french fries) with battered cod with salt and malt vinegar (or nbc) for it to be traditional - some mushy peas & pickled onions wouldn’t go amiss either. The difference between good and bad fish & chips is the diff between a real experience or an eternally off putting experience :)
@Ira888812 жыл бұрын
I heard that in England (I’m a Yank), a lot of places aren’t using cod any longer because it’s too expensive. True? We had a great fast food chain in the states called Arthur Treacher’s (remember that?), which was enormously successful until new management switched from cod to some other fish. I can’t remember which species is said to be “close” to cod, but it sure isn’t. People immediately noticed the difference and stopped going there. As for me, I loved the place both before and after.

@@Ira88881 Haddock is a common replacement in the UK, but I think it's more for environmental reasons instead of cost. It tastes pretty identical, just a slight difference in texture RE: flakiness!

@@MadelaineJonesCreative Since I posted, I remember: Arthur Treacher’s switched to Pollock/Pollack because of cost.
