At one time... people made a lot of different types of vinegars. It was a great way of preserving fruits and Berries. Nothing went to waste. I wish more foragers would try it. Thank you for sharing.❤

in BC we sometimes use blackberry balsamic or blackberry reduction on salmon fillets, works well in concert with ginger rosemary and lemon. Thanks for the recipe!

I don't eat meat myself anymore, but this stuff reduced down is also the ultimate pairing for pigeon breast or duck.

Thanks Lewis I made some last year for the first time it’s yummy. I still have loads left to. A different method to yours, a hot infusion instead of the cold vinegar. Either way it’s definitely a thing to do with blackberries 😊

My nan used to make her own blackberry vinegar, i never knew how. Until today. No idea if she added sugar to it, but it didn't taste like she did. We used to get a glass of it when we were sick as kids. Thanks for happy memories.

Nice method. I've made a simple raspberry vinegar, no cooking and no sugar. Thinking of trying blackberries. Could I do this with my frozen blackberries? Picked this year.

Love this. Thank you for sharing....none ready here in Norfolk (UK) yet but keeping an eye out...I also have a compilation of recipes from a Fire Cider book to look through, but I like the look of this one ☺️

Ooh..lovely to see the development of your channel into doing recipes too. Not caught you for a while. Great, clear presenting style and the vinegar and syrup both look yum. Yes..would be great with any wild meat I reckon. Gonna try this..I live up North so blackberries not quite ready yet..probs another week or so. I love the first berries off the end..always the best ones! I look forward to more of your foraged recipes. Also..for the lazy (and well off) there is a great pomegrate vinegar called Osu you can get in Sainsbury's..it is good stuff. I think I will try this but with ACV instead.

Isn't it syrup with sugar? Vinegars is just with fruit and water, +- bit of sugar. They grow this thick live "mother" or Scoobie on top, so if I boiled it, it would damage live bacteria (but definitely would store long time:) I guess it's just words. With the vinegar does the souse/syrop still taste sweet to put it on pancakes? Thank you for the recipe

Yes good on pancakes 😊. If you want to make it more like a syrup you could add a little more sugar in too

I can't believe how many ripe blackberries you have! I've managed to eat literally 2 blackberries this morning from my patch, nothing is ready yet. However will give this a go for sure when I have some blackberries to work with! Loving the increased cooking content Lewis - how are you various tick bite wounds?

Can this be made with say apple cider vinegar? or would that ruin the taste?

I will try this with ACV...there is one in sainsburys..ACV with pomegranate called osu. Very nice. I think it would work fine with it..and be better for you if you use the mother type...with honey not sugar and in a glass vessel not plastic!

Yep pretty much any vinegar would be fine, though I stay away from malt vinegar as it’s a bit harsh

What's your best method for getting clean bottles? Do you sterilise with diluted bleach? Or boil them?

I sterilise these kinds of glass bottles by washing and rinsing them first, then filling them with boiling water and leaving it for about five minutes before emptying the water out and filling them with the fruit vinegar ( preferably while the vinegar is still hot), then capping the bottles and leaving them to cool down naturally.

I just put them in the sink with boiling water. If it’s something that needs to be completely sterile like if I’m making kimchi then I’ll dry the bottles in the oven on a low temp just before using

Nope, not for a long time. Vinegar and sugar are both preservatives, so as long as it’s stored in clean jars it should last for at least many months, just like a jam
