Ah I did film that but somehow I must of left it out of my final edit 🤦‍♂️ haha. It’s got a nice balance between sweet and acid like a gastrique. In a way it’s similar to a tomato ketchup without the artificial flavours, and more of a savoury earthy taste

I'm so glad you've made a video on what to do with hawthorn berries! They're all over the place where i live, but while I knew they were technically edible I had no idea what to do with them. I'll have to give this a go this weekend 😊

Hi 👋 I attempted my first batch of this ketchup. I halved the recipe as I had 500grams of berries. The squishing the berries through the sieve/colander is a real labour of love 😂. I used powder forms of allspice and clove. I think it tastes great and I’m dead impressed with myself 😂 I might harvest some more and stock up my pantry 👍 Thanks for this video. 🧡

Just made a 250g batch tonight and used 2 dried Birds eye Chilli’s instead of star anise. It’s bloody lovely. Thanks for sharing 😊

I’ll be harvesting some hawthorn this week along with blackberries. Have made fruit leather with it in the past and is great for that as no other ingredients are really needed because of the pectin in them. Have eaten some of what I made 3 years later and was still good. Definitely going to try this though this year. Thanks buddy👍🏻

I made some about five years ago, but I ate it all in a day or two :) It is impressive that it can last a long time though.

Followed this guide, but used Wiley's apple cider vinegar and some additional cayenne and it turned out lovely, cheers! amazing with pork

@@UKWILDCRAFTS it's so delicious. I added chilli and hickory smoked salt, oregano, thyme and sage. Today I picked another kilo and added homegrown fire chillis, ginger and garlic. Thank you once again 💚

I was looking at all the haw berries in my hedge the other day and wondering how to use them, well, now I know what I'm doing on Saturday. Slight change as I don't enjoy star anise, so I'm going to use ginger and cardamon instead, keeping the pepper but using fresh green peppercorns. Thanks for the inspiration, and it's remarkably quick to make which is always a bonus.

Thankyou for sharing this. I have lots of hawthorn trees and always wondered what to do with the haws. Did you know it was also known as bread and butter many years ago.

made my first ever batch of this the other day, I was surprised at how tasty it is, i used apple cider vinegar for mine :) i also tried to turn a batch into pulp, to try them into dust, but even at 35 degrees that didnt work hahaha, think ill just go the traditional route of seeding and drying them whole before drying and crushing.. a tip for anyone going to make this, be careful using thin necked bottles like in the video and i used at home, if you make a particularly viscous batch itll be tough to get out haha

Cinnamon is another sweet spice alternative to sugar.

You could, but above 38°C everything good about honey will go to waste. And remember to taste it, honey is so much more sweet than sugar.

Looks great, I wonder what it tastes like :) I once made a sort of hawthorn 'leather' which had a nice flavour, though it was a faff to make because that involved removing the stones without cooking beforehand, as I recall. Do you think it would be best to use hawthorns now or would they still be alright in November/December? I've noticed that the two abundant trees behind my house seem to still have a fair number of berries on at the end of winter, though I imagine by that time they will all be below par to say the least.

Any reason not to use half & half Haws and Rose Hips (they often grow together and are both packed with Vitamin C)?

Rose hips would work fine in this. You could do it with just rose hips if you wanted

When is the best time to pick Hawthorn? Do you need to wait for frosts?

From now through to around November time, they will stay on the tree longer but tend to get a bit mushy. I don’t find picking them after a frost makes a difference, but you can always chuck them in the freezer to simulate a frost :)

Wow. This might make a nice addition to the store cupboard. The green tomato ketchup I made (lost tomatoes to blight this year but waste not want not!) Is delicious! Would have been useful to have a 2 min 'identifying hawthorn' segment in the vid maybe?

I think they can but it's a bit Crocodile Dundee..."you can live on it, but it tastes like 💩" apparently you should avoid the seeds though. When I tried them they tasted a bit like candles ...don't ask how I know 🤣

Yep can eat them raw. They don’t have much of a flavour. They make a decent nibble while wandering though :)

A plant based diet is high in anti oxidants whether cooked or not : )

Awesome dude, I bought some cyder vinegar last year with the intentions of making haw ketchup but never got round to it, Will definitely give it a go this year, Also what is your take on haw and BlackBerrie jam Is it Worth it?

Yes would make a good jam. Blackberries are low in pectin but plenty of haw berries will help it set. I like a good autumn hedgerow jam with blackberry, damson, rosehip, hawberry and crab apple

Thanks for the reply I usually make a BlackBerry and apple jam but will definitely consider adding haw berries to it this time, damson Is a great Shout but unfortunately they never seem to make it to the cooking process as I eat them all beforehand 🤣

I'm not sure about this one mate I think it's a step too far for me. However I've never tried it . Been busy making elderberry and blackberrie cordial and doing a nutella with the hazelnuts.

It would be worth figuring out what you lose when washing them in water. Because they are are in the air. I'd imagine you'll lose more nutrients than dirt. If they have any water soluble nutrients, you can lose them by washing them. Food for thought.

I agree it is poison, but honey is no better unless you’re using pure honey which is far too expensive to use in the amounts you’d need for this. The cheap honey that supermarkets sell are mostly diluted with cheap sugar syrup. I find it better just to realise anything containing sugar is unhealthy and just eat it in small amounts
