We've been threatening to make a carrot cake video for years and today's the day... We really outdid ourselves haha- three layers of caramelised delicious cake with cream cheese frosting!

INGREDIENTS 400g white flour 350g coconut sugar/muscovado brown sugar 6Tbsp ground flaxseeds 18 tbsp water 400g finely grated carrot 1tsp baking soda 4tsp baking powder 1tsp ground cinnamon 1tsp allspice 2 tsp vanilla extract 350ml sunflower oil 100g walnuts, crushed (ideally toasted) ICING 400g vegan cream cheese 200ml coconut oil 80ml maple syrup

Noooo! Coconut sugar is made from the nectar of the coconut palm, not the coconut meat.

I made this using the recipe a couple of times, absolutely amazing taste. I have tried crushed almonds instead of walnuts, still amazing. I did find it a little soft, especially as there are 3 layers and the bottom layer seemed to get a little ‘soggy’ so i now use 250 ml of oil and it is still absolutely gorgeous! I love it

Hey Dave and Steve! There's a mistake in the written recipe: it should be 4tsp baking powder + 1tsp baking soda instead of just 1tsp of baking powder right? Heads up for anyone following the recipe! The taste is great but my cake didn't rise much and came out sticky instead of crumbly, probably because I followed the written recipe. 😅

You might need to let it sit for 5-10 minutes. I use 2:1 water:flax and it thickens up pretty quickly.
