Biryani with the cover is the most legit way of cooking it...its called "Dum phukt" or "Dum" basically u don't allow the steam to escape so it makes the meat tender and allow all the flavour to steep into the rice. Its basically make shift "convection oven".

That bread on top is sort of nan (bread). It is applied to the biryani pot before putting the pot into some kind of oven. The biryani and the nan is cooked at the same time. The nan helps retain the aroma and flavors within the pot. If the nan is well cooked, you can eat it. If not, you can throw it. BTW, this biryani is called DUM BIRYANI. The most popular place for dum biryani is Hyderabad.

Hi Jessica, great review of Dhamaka restaurant. You're right, Dhamaka does mean explosion The biriyani was sealed with a pastry lid in a process called "dum-pakht" , literally in its own 'breath' . It's just whole wheat flour dough Covered over, I think you can eat it but most ppl don't, but i think it becomes crispy normally we eat chapathi really soft.

Usually we don't eat that part. Because we use whole wheat flour to completely seal the container. It helps to cook biryani without loosing the Aroma of spices
