Biryani with the cover is the most legit way of cooking it...its called "Dum phukt" or "Dum" basically u don't allow the steam to escape so it makes the meat tender and allow all the flavour to steep into the rice. Its basically make shift "convection oven".

Hi Jessica, great review of Dhamaka restaurant. You're right, Dhamaka does mean explosion The biriyani was sealed with a pastry lid in a process called "dum-pakht" , literally in its own 'breath' . Performing a Google query for 6851 Dhamaka gives it away as a restaurant in McKinney TX. It is north of Plano in the Dallas Fort Worth metroplex area. It's just whole wheat flour dough Covered over, I think you can eat it but most ppl don't, but i think it becomes crispy normally we eat chapathi really soft.

Usually we don't eat that part. Because we use whole wheat flour to completely seal the container. It helps to cook biryani without loosing the Aroma of spices
