Sad part is that it’s not always a common dish in Thailand. I was there and expected the most authentic pad thai and they had no idea what it was. I had to pull up a picture of it to show them.

There are always some Pad Thai vendors/restaurants everywhere I go, not all restaurants serve Pad Thai though, they're considered street food and aren't sold in mid/high-end restaurant, you'll need to find a street vendor that SPECIFICALLY sells Pad Thai. He's spot on about the noodles. I learned the hard way trying to do the quick hot method. Just use Luke warm water and let it set for awhile, or be safe use cold water put in before you start cooking. Leaves a lot of room for error.

From the ingredients it should still taste okay even if it looks like she just threw a bunch of stuff together and called it pad thai (the proportions are way off like Uncle Roger points out). Her technique and presentation also looks like she's trying to put in as little effort as possible so she can get out of there once she finishes the video. This might even be worse than her pho video.

@@tribalypredisposed "okay" as in "chicken and beansprout noodle dish thrown together when you're too lazy to make actual pad thai (and aren't working off a recipe/can't remember the recipe)". I wouldn't serve it to others nor would I want to be served this at a restaurant but it should still be edible even if it's not a good pad thai. It's definitely not on a level one would expect a professional chef to make. Replace the rice noodles with rice and this could be passed off as a lazy chicken fried rice.

I was told there is a philosophy in Thai cooking that says you need: something sweet, something salty, something spicy and something sour, and it's about the balance of all of those and being able to taste a bit of each of them. That would explain why things like: fish sauce, sugar, tamarind, limes and chilis are commonly used, beyond "they grow in Thailand". I think if you explain that philosophy it helps people understand Thai food better.

That sucks for me because I hate sweet things in almost anything savory. I don't know why. I like savory with bitter, salty, and sour, but sweet is that one thing I never feel like belongs there. Similarly I like sweet with bitter, salty, and sour, but... not savory. It's just that ONE combo. Which sucks because it's really common where I live for people to mix savory with sweet.

She also destroyed Mexican pozole. She made American chili and tried to pass it off as pozole. Years later I am still livid that the video still exists. You'd think her production company would hire an actual expert in Mexican cuisine, or better yet, a freaking home chef! Even the Mexican Grandma that's on KZbin that lives in a ranch--she could've consulted anyone but instead she butchered the dish. Rachel Ray does not know how to cook. She's not a chef. She was working at some store doing food product demos and that's how she got her start but as far as knowing how to properly do a dish right---nope.

We just have to show them shitty vs good and have them taste the difference or smell the difference at each step. In order to replicate something and build off of the base with your own style, you have to know how to make it to begin with. Thats whats missing, just some proper understanding of the fundementals as it creates food worth eating

Soggy Pad Thai can change one's life. I was a typical Thai elementary school boy when I have to eat soggy Pad Thai at my old school catering service in Bangkok, and THAT event made me hate Pad Thai for almost all my life. I just changed my attitude when I found a shop that cooked Pad Thai right. Looking at her cooking in this vid brought my nightmare back.

I do understand the inclination to righteous anger, but try to remember that everyone has to start somewhere. Try to think of how many people thought this looked so weird or even looked good, tried it, and realised for the first time that fish sauce is awesome. It smelled so weird, but omg. Or tamarind is out of this world. And now they've got two cool new ingredients to learn how to use, and Rachael ray won't have many other recipes to use them in. But you know what that means? It means they're gonna go online and start digging, and as soon as they do they'll start finding the real thing. Always let the food be the heart of your narrative. This story doesn't need to be about Rachael Ray or the layabouts who never learn. This story can be about pad Thai and the fools who pursue it with love and determination. The end. Have a nice day!

I went to an authentic cooking class in Chiang Mai, Thailand, (with a teacher who actually reminds me of Uncle Roger hahah) and it literally took 5 mins to make an amazing pad thai. Like Rachel Ray is just overcomplicating things. Do it all in the same pan! And wtf did she do with the EGGS? And all those weird ingredients?? omg. But I do think Uncle Roger missed saying you should use both fish sauce and oyster sauce? Because we did! And coconut sugar

No need to take this personally, but on the whole, many cooks in the US use far too much salt and have difficulty with sticking to subtle flavour enhancements rather than using over-powering spices, or condiments. There was even a show in the 2010s where plenty of this comes to the forefront. It was called “Worst Cooks in America”.
