6:00 The story if anyone is interested. He's pretty close but there's a nuance. The words actually mean "break metal pots sink ships". It comes from ancient times when soldiers were at war. The general saw their army was on the verge of defeat so he ordered his men to break their metal cooking pots (to signify they've had their last meal and will not need it again) and sink ships (so there is no way to flee and the only way to survive is to defeat the enemy), as a way to boost morale and make sure every solider is fighting for their lives. The nuance here is that "break metal pots sink ships" is the cause, and "fighting to the end" is the effect. So 破釜沉舟 means more about being resolute and the determination in one's decisions (ie. the decision to break pots and ships and seal their own fates) than it is about the fighting to the end part. But yes it looks cool :)

There's a part before, and it's that the general was the vice-general and he saw that things weren't moving and they were the rebels so they wanted things to move. So he chopped the head of the general off to take his place. Also if you try it yourself it's not gonna work cuz the guy who broke the pots was the strongest man and one of the best general in his era, so that helped.

That sounds very archetypical. It has been claimed that Hernán Cortés sank Spanish ships so that hus soldiers would not have any options appart from facing the Maya Empire and defeating them. This is factually false but the meaning is carried from that old chinese story, which is impressive.

MSG is a flavor booster that's it. It makes sweet things sweeter, salty things more salty, sour things more sour etc. It's extracted from things with higher contents of naturally occurring glutamates like seaweed, corn, tomatoes etc. By itself it's slightly sweet and savory(very mild). Little side note, if you add a pinch of msg to Helmans mayo it ends up tasting almost identical to kewpie. I've also tried it on fruits and chocolate.. its so weird that chocolate can taste better than it does already.. msg is pretty wonderful. Just don't overdo it..

So I agree with the sentiment but kinda wanted to point out that a cheese like Parmigiano is pretty much a highly processed food item that seems pretty far removed from nature 😄 (as compared to something like maybe cottage cheese or paneer with fewer processing steps). We kinda tend to arbitrarily draw the line what is 'natural' is just what I'm trying to say, I personally don't care too much if something is 'artificial' and just eat everything in moderation

@@leparraindufromage366 Especially since something being natural or not doesn't say anything about it being good/healthy or not. People really don't understand chemistry and stuff. Something being created in a lab and is purely artificial - can be very healthy. Lots of stuff in nature - will kill you. Highly processed foods are not so healthy though, but in moderation.

Parmesan Cheese alone has 7x the amount of bound and free glutamate than any dish you can find in a Chinese restaurant. If you consider that glutamate is naturally occurring in almost all foods and is particularly high in red meats, dairy, and tomatoes... it makes no sense how anyone can consume Spaghetti and meatballs and be perfectly fine but turn around and say Chinese food gives them headaches. I believe there is something else causing this issue.

For westerners who haven't try this classic dish, put ketchup on your morning scrambled egg and you'll get a similar spirit. That aside, the tomato and egg dish is very likely to be the first dish a Chinese person learned to cook. It goes amazingly well with rice. Adding ketchup to the recipe enhances the tomato flavor as most tomatoes from supermarkets do not have enough sweet and sour flavour. The balance of sugar and salt in this dish makes huge difference to the flavour profile and everyone has a preference. One more thing I learned from making this dish, when you think there's enough sugar/ vinegar/ketchup in a dish yet the sweetness and sourness is still too weak, that indicates the dish needs a pinch more salt.

My mom is Ukrainian and eggs and tomatoes (яєчня з помідорами) is a staple food for her and it can be breakfast, lunch or dinner; ready in 10min, simple and delicious.

There is a similar Turkish egg dish called menemen, pretty similar to this dish minus the sugar and ketchup, with tomatoes, bit of green pepper and sometimes onion. White pepper is common in some western cuisines, including Scandinavian. A few years ago, I obtained a cookbook of recipes from Nobel Prize banquets, and they used white pepper much more often than black pepper.

I gotta say, scrambled eggs and tomatoes seemed kinda weird, but then I realized it looks almost identical to the "traditional" tomato soup my grandma and then my mother made. It's a sweet tomato soup with a lot of this inlay (is that the word?) made mostly out of beaten eggs (and probably flour), poured into and boiled with the soup.

Here in New Jersey if I'm ordering eggs (or more than likely an egg sandwich) I usually get asked if I want ketchup on them. If they don't ask me I have to remember to ask them not to add it, because here it seems to be the standard way to serve eggs.

In Colombia we eat huevos pericos which is scrambled eggs with onions and tomatoes. We don't add ketchup and sugar to it though.

Tomato omelet is a common greek food too, kinda like a bachelor snack type of deal. I guess it's not common in america? It's more cheesy than the chinese variant cause we stuff it with feta but not too dissimilar-looking. We typically would eat it with fries or bread though.

Try MSG from seaweed. I think MSG from neutralization of glutamic acid (fermentation of corn or cassava) would produce Trans form of glutamate and cause chinese food syndrome. Been reading about it for quite a while. Current technology we do the reaction and remove the Trans form. Some cheap MSG don't remove them well though.

I haven’t tried any kind of egg & tomato combination myself, but the first thing it made me think of (from the description alone, before getting into the video) is shakshuka, which also sounds really interesting. I don’t know if you’d be interesting in covering a shakshuka video, but Adam Ragusea has what looks like an interesting video for a slightly non-traditional one (he says in the video that he’s not going for any kind of authenticity). There’s also this KWOOWK channel with two million subscribers that I found recently that seems interesting if you want to check out someone new: kzbin.info/www/bejne/gmiZiX2nr56DjdE It’s been a day or two since I watched it, but if I remember correctly he did a traditional one and then a spiced up one. Also talked about the origins. Definitely has me interested in trying eggs & tomato together.

shakshuka is great, check out middle eats they have a couple versions from around the middle east. Really it's good with whatever ingredients you like, I really like adding basturma and making it more in line with turkish menemen besides the harissa I always add. Chirbuli (the georgian version) with walnuts is also really good. Chinese eggs and tomatoes is a much lighter dish so I'd make it when I want something a bit softer on the palate. Both great in their own right.

So, there are actually 3 main theories that I know to the MSG problem. I'll try to keep this bief... One is the the Histamine theory. Histamine in short is your body's defense neurotransmitter and also plays a chemical role in the immune system as a hormone. In essence, this theory is that you are sensitive or allergic to MSG. (Basically the same thing, just to different severity) Allergies are known to cause bloating and migraines. Second is the sodium theory. In this theory it is proposed that the excessive sodium density in the digestive tract is removing water from your blood causing the bloating. (water will pass through the semi permeable membranes to reach the same concentration on both sides) When there is a lower volume of blood, the body still attempts to move the same amount by raising the flow speed with an increase in blood pressure. High blood pressure having the side effect of a headache. Third is the glutamate theory. This one is only really common certain groups of white people, but it is scientifically unproven to be wrong or correct as far as I am aware. They theory goes something along the lines that, since glutamate is a major neurotransmitter, it may be acting like a stimulant. It's proposed that it may be affecting the central nervous system causing the headaches and bloating somehow. However, looking at the type of receptors glutamate binds this theory seems the least likely, but I personally will not discredit something till it has been scientifically disproven.

Oh watching your video made me think. I like to make my own spice mix and I sometimes it starts to loose a little flavor in the jar. Could msg help boost it preserve the flavor?

I'm not a chef, but I do make my own blends. I try to make them for about 3 months max for a 'general' one, a Thanksgiving/Christmas one, and one-offs for things like making bacon. I use MSG, but I don't think it helps preserve flavour (though NOW thinking...maybe(?) for the reason ahead). I usually have a sugar or salt component in it, which ABSORBS some flavour as it sits...so, 'kind of' preserving the flavour since the salt/sugar will put it back 'out' when used...

@@britanyestrada4151 I'd bet 95% of people keep spices WAY to long! At least, opened. Certain things obviously keep longer, but I try to get to the bulk spice place (where I buy MAYBE 2 - 3 tbsp at a time) once every 2 months. Rarely now do I buy anything in packages from a grocery store unless using most of it quickly for canning, or something like chili flakes, whole peppercorn. I keep a lot of things in a container with a pump that can remove 'most' of the air, which helps. Especially good for things that are INSANELY expensive (like what you can do with the skins of those tomatoes from the video!)

It was (maybe still is) very popular in Korea just a couple years ago for university-aged Koreans to get English tattoos. Things like 'determination', 'diligence', and the sort. The dumbest thing I've seen - I shit you not - was 'bling bling'.

5:52, same thing in Asia though. Lots of nonsensical messages in English just because it looks cool/exotic or whatever. Just go to Japan, you'll see plenty of people with t-shirts saying completely insane things, often with the words in the wrong order or completely missing.

my mom loves tomatoes, i love eggs....so we often made scrambled eggs with tomatoes cook up some onions and bacon, throw in some eggs and crushed (can) tomatoes i still make it from time to time..but with a lot less tomatoes :D we're not asian....we're from EU - close to italy...as white as it gets :D

I know at least 5/6 people (including myself) who can eat that much rice, which looks around 500 gm uncooked. But yeah, it’s rather a huge amount for the majority of the population. People in the countrysides do have a big appetite as well as a significantly higher BMR, which makes sure that they are still quite lean. It’s 4 calories per gram. A total of 2000. And carb is digested much faster and is not as satiating as protein. May be that lady is only posing with it. But I would not at all be surprised even if she completed it. Edit: sorry 3.5 per gram + water > around 1700/1800 KCal in 500 grams.

12:58 umami is the flavor of meats(accurately glutamates) not savory. Savoury is more accurately defined as salty or spicy flavour rather than sweet. Normally in India where I'm from savoury is used exclusively for crispy snacks but never with meat.

Tomatoes entered in China sometime in the late 16th or early 17th centuries, and was called “foreign eggplants” due to their similar appearance to eggplants. Many 'authentic' Asian dishes have ingredients that have root in European countries. Even Thai's famous Som Tum (papaya salad) have the main ingredient papaya introduced by Portuguese explorers. It is really interesting when new food from foreign land become part of a culture in different land.

the bloating and headaches are the result of a lot of salt/sodium. MSG is not special in that regard, soy sauce, salt or any other high sodium ingredients can cause such if you eat too much
