I wish your affiliate links worked on German Amazon, too, but I am definitely buying myself the smaller (9.5”) omelette pan. The 11 inches was simply too big for my needs- I rarely use it at all. Pity, but what can I do? It’s beautiful but hubby and I eat like sparrows and it’s also a bit big for my induction coil.

I figure this only works for USA orders? Too bad because 25% is a pretty good deal, you dont find many offers around on such products, maybe ask if De Buyer can do something similar for Euro customers?

I am a nurse and I just have to say I love your channel. I used my grandmas cast iron but now have been using carbon steel for a few years because of you. This is so much healthier than non stick. I am grateful for your useful information.

Totally agree, I thought it was a bit annoying to start off with but once I got the hang of it, it just makes the best food. I also keep stainless steel as well for high acid cooking. Most of the time I just need to wipe it out.

i got a 24 cm De Buyer Carbone Plus pan and a 28cm De Buyer Outdoor Deep Blue Steel Sauteuse. Not sure where both stand but i do like them. First time for me using a carbon steel pan.

Hey Uncle Scott, Try the Country Fry Pan. I've had the 9" for about 5 years and love it. Can be used as a small wok or deep fryer. My favorite is for Thai coconut milk curries. Just the right size to stir fry the proteins and curry, then simmer the veggies , coconut milk, fish sauce, and meat until ready to serve.

Mineral B Pro all the way. Love that handle, and the handle being oven safe is a must. Those pans are tanks too. I've accidentally left an eye on high heat under them and forgotten about it for 30-60 minutes, and I was able to restore both to where you could never tell anything happened.

Love my de Buyer Mineral B Pro 9.5” omelette pan! Got it a year ago because of this channel’s recommendation. Makes cooking omelets, scrambled eggs, or fried eggs in general super easy to slide out of the pan with the rounded edges.

All three of my DeBuyer pans are working pans and do not look like pieces of art. They are between ten and 15 years old. I did the stove stop seasoning once in all three and got cooking. The working pans are non stick for eggs and potstickers and anything else that I cook in them. As I have told my nieces and nephews…your cookware is made to be used and will not always look pretty. Don’t be afraid. Just cook.

I first found your channel around the pandemic time and got one of the smallest dry pans they have for a real great deal. It can only Cook one egg at a time but it's wonderful for that job. Do you think there's room for a carbon steel when my cast iron weighs the same? I'm struggling to justify one. My field no 8 weighs 0.1lb less and has the same cooking surface as the mineral b pro 11 inch

I'd be tempted to get the 8" 'blue carbon' fry pan, or the 8" mineral-B Omelette pan. But I have a 8 + 5/8 inch Matfer pan that serves that duty.. maybe not quite as well, but close enough. It's pretty much dedicated to making my eggs every morning; Its seasoning doesn't seem as durable as my cast iron or my De Buyer carbon steel, so I won't use it for as many things. I've also been appreciating stainless lately.

Dang the 12.5” Mineral B Pro with the helper handle is still out of stock. Hoping DeBuyer can get more of those in so I can use the discount code with that. I got my mom the 11” one and ribeyes/NY strips are just slightly too large for the bottom cooking surface in that pan with parts of the steak leaning against the pan’s walls. The 12.5” model with the helper handle would be perfect.

Only having a regular electric coil stove, do you think it would be possible to season a Mineral B in the oven if I wrapped the handle with a damp cloth and tin foil? I've heard of people seasoning woks with wooden handles that way. I already have the11 inch Mineral B Pro which was oven seasoned and was thinking of getting a crepe pan.

Why no love for the carbone plus line? The base is like the mineral B but with a bare handle, and the second line has a stainless tube handle which is lighter and more comfortable to hold than the pro model.

I really like the carbone plus also. A little bit less expensive.....but a really solid pan, and is oven friendly.

If you're considering dipping your toe in the carbon steel waters I can verify DeBuyer work well for someone just learning. I started with one in January of 2021. I now have 3 of their skillets. (I don't remember the exact sizes, roughly 8, 10, and 12 inches) You can learn seasoning on them. If you're like me, you *will* make mistakes. They'll let you know and you can reset and figure it out. The pans come through fine. I've used them on the electric flat-top, a cheap...er..."inexpensive" induction hot plate, and now on a standard residential gas cooktop. No issues with warping on any of these. The pans are as flat and functional as the day I got them, I could put them right back on an electric flat top. I've gotten rid of all my chemically coated non-stick skillets. Now my DeBuyer carbon steels are my go-to pans for cooking. If I am going to be doing something that involves acid - eg. a lemon or tomato based pan sauce - then I'll use my stainless steel. Going to carbon steel does have a bit of a learning curve. It is different from cooking on chemical non-stick, and even somewhat different from stainless. I believe these pans have helped make me a better cook, by actually putting some thought into it. If you're considering carbon steel, do it. DeBuyer level quality and features at 25% off is a great deal. Hmm, even though there's a stainless saucepan I really need more than another carbon steel pan, a dedicated omelette pan is awfully tempting.... ;-)

I have a few carbon steel pans. The one I use most is my Misen, because it's the easiest to grab quickly. It started out totally black but got bloty and it works great.

My new de Buyer Pro 11 inch is so slick an egg cracked in the middle will slide down the slope until it is sitting next to the rim. Once the egg is a little "set", I can slide it back to the middle and it will stay there. I've checked the inside bottom of the pan with a straight edge and when the skillet is cold it is slightly higher in the middle. Is this correct or is the pan defective? I'm using a gas range.

it is defective, but might be because of the gas range. I think USK mentioned a pan he had the was bowed and one day it was no longer in on eto the pancast podcasts. I don't know how exactly, but uneven heating is what makes it deform (or reform). If it's problematic, try to uneven heat it on purpose, if there is no garanty on it at least 😛 Worst case you make it bow even more, so only do that if it's problematicly bowed imo.

I think all the de Buyer lines have their uses where they absolutely shine. For example, I got a 7" and an 8" blue steel crepe pan on sale for under $50 for the pair and I love them for the following reasons: (1) the price, obviously, (2) they nest perfectly so I hang them together on a single small nail thus having two pans in the space of one in my cramped kitchen, (3) they're relatively light so they come up to heat faster and I can make a quick breakfast of two eggs in the 7" and some bacon, breakfast sausage or a hunk o' ham in the 8", and (4) because they're light and inexpensive (edit: and very low profile even when nested) I can pack them in my backpack and actually cook a meal over an open fire when I'm fishing or hiking. I'd never think of doing that with my main carbon steel pans and my Lodge cast iron is cheap enough but way too heavy and bulky.

I think for 2-3 eggs, the 9.5 is good and for 3-4 eggs the 11" is good. The overlap is at 3 eggs... can do 3 eggs in either.

Uncle Scott, discovered carbon steel cooking from you. It has been so fun learning. Had been a cast iron cooker and I still use cast iron sometimes. I really like deBuyer cookware and have several of their pans. Using your link, I just ordered the oval roasting pan so I could cook multiple portions for company. One question I would like you to address some time is your use of heat and when to know to adjust it after getting the pan to a searing hot level. Keep up the good work.

Great pan! I'd use peanut, canola, vegetable, or grapeseed oil. Any of those work well.

debuyer mineral pro's are my favorite pans of all time. i dont fuss too much about seasoning them, just getting the temperature right makes them pretty much non stick.

I look forward to checking out your other videos. De Buyer also has a cheaper version called blue steel or something like that. What do you think of these? I am looking for a crepe pan. Any recommendations? What size should I go for? So crepe pans can do tortillas as well. What is the difference between a tortilla and a crepe? I guess with the tortilla you press them first in a special press then cook them in the crepe pan? I believe that there is some soft tortilla recipes too where you do not need the press but then aren't they going to be just crepes? LOL Sorry about all the questions. Thank you

This may sound obvious, but if you like big crepes get the 12", if you like mediums get the smaller one. I like the 12" myself, and my wife makes crepes with it once or twice per week. We have the regular series Mineral B. The blue steels are OK, but I'd suggest the Mineral B or Mineral B PRO lines They are top end, and these pans will last a lifetime if you take care of them, so even though they are a little more I think it's well worth the upgrade.

The 11 inch pan has free shipping until you put in the 25% discount. Then you have to pay for shipping, so it's not really a 25% discount, it's only 15%.

I don't think it removes it but I think the free shipping is only for oders of $99 or higher, so if the discount kicks you down below $99 you prob lose the free shipping. But you can always add a spatula or something to you order if you are close and bump the total back up to $99.

New Woll very very thick Carbon Steel skillets. Now then, I just bought the most amazing WOLL Carbon Steel Pan that makes my Mineral B look like a toy. It is a 8 inch (20cm) Carbon steel pan from German brand Woll (more known for their non-stick), It is 3.5mm thick!! It feels like a heavy cast iron pan. It weighs only 150gram less than the Debuyer 9.5 inch skillet (2.5mm thick). I bought it for eggs for the wife. Just did a first season on it on Gas, but tested it by putting it on full whack on the induction plate. Still perfectly flat. It has a wooden clad handle. So I will use it purely on the cooktop, If you are in the USA you probably can buy it direct or from Amazon ( UK or DE) I live in Ireland but bought it on Amazon UK for £49. A bit more thant the Debuyer 8 inch but so much more solid. Description "Woll Carbon Steel Inductive Flat Pan Diameter 20 cm Height 5 cm". Would be fun to add to your collection... At least it is more different from the other ones.

No love for the Blue Steel Access line. Great price and I do like the rivet-less interior. The tempered interior makes it a great entry for noobs as well.

I have both Matfer and DeBuyer Mineral B. There is no difference in quality or cooking ability for either. The difference is only the ability to go in the oven for extended cooking. The Pro model does allow for extended oven cooking.
