Should I read resistance across the pins of my crystal always? I have two off a board I over volted and both of them are reading open across my ohm meter.

Yes the resistance seen by an ohm meter will show an open circuit.

Essentially the electrical signals link into the crystal surge piezoelectric effect and these are affected by the resonances of the crystal. This is then reflected back into the electrical circuit. Effectively the very sharp mechanical resonances are linked into the electrical circuit via the piezoelectric effect. Hope this helps
