About the Once Upon a Time/Undertale leitmotif: I won't do a video about that one until I've done all the others, since the Undertale leitmotif is present in sooo many songs and it'd take forever to make.
I'm not doing leitmotifs that are in less than three songs (I am including the songs that are exclusive to the demo), not yet anyway. Maybe someday I'll make one big video showing off all of them.

the idea of it is that either mad dummy had his theme or muffet had her theme and napstblook remixed them to be the one to be his theme and the other. Mettaton who used to be neighbors or cousins with napstblook got him to remix some of their songs. so mettaton's songs are all remixed versions of mettaton's original theme. also, either dummy! is remixed into ghost fight and spider dance or spiderdance is remixed into dummy! and ghost fight

Theory warning. Mettaton's diary mentions a cousin going off to possess a training dummy. This is probably Mad Dummy (I've yet to find confirmation of its gender, but everyone seems to assume male), as he is seen after his fight working for Undyne. Mad Dummy mentions a cousin possessing the DUMMY in the Ruins, who left the training dummy as a result of interacting with the protagonist. This is before the fight with Napstablook. This can mean one of two things. a) there are four ghosts in Undertale: DUMMY, Napstablook, Mad Dummy, Mettaton, and they're all cousins. b) what if Nasptablook inhabited the DUMMY? There are several arguments for and against. Against: Napstablook recognizes neither the protagonist, nor Mad Dummy, when he encounters both in Undertale. (However, Mad Dummy was not facing Napstablook, so it's possible that from behind, in the dark, Blooky didn't see it clearly. Also, it's possible that Mad Dummy would've run into Blooky on its commute from the garbage dump to Undyne's house.) If you bore Training Dummy, it floats off the screen, the flavor text "Dummy tires of your aimless shenanigans" indicating an impatience Napstablook never seems to possess. For: Napstablook comes across as shy regardless of how you interacted with Training Dummy (boring/ignoring it, talking to it (Mad Dummy implies what the protagonist says isn't nice) or attacking it). If he were the Training Dummy, he could simply have recognized being ignored or shunned by other people, and not have let it get in the way of meeting the protagonist properly (once he warms to them). Well, Muffet's theme "Spider Dance" is pretty much a remix of Ghost Fight, much like Dummy. So it's really just a recurring melody. Toby Fox admitted himself that he reused melodies a lot.

Another tip I found helpful: When listening to the original song, I listen to the main melody, the secondary melody, and the bass just so I have a feel for the song so I can hear the leitmotifs in other songs more easily.

When I first heard spider dance I heard the similarities to ghost fight. Even now if one of them is stuck in my head they usually end up merging.

Spider Dance and Dogbass have this leiftmotif, and when you hear dogbass, you see two dogs dressed up like grim reapers, maybe this song is associated why spooky things (except skeletons).

The message on the ‘Dummy!’ fight that Jakob put in says ‘I was grooving so hard my finger slipped’ as in he was gonna talk but instead clicked check cause he was grooving so hard his finger slipped and in pathetic house you said at 200 speed you hear spider dance I changed me speed on the video to 2x I still hear it to infact it sounds the same
