FYI, the "green" beans he's using in the video are called mung beans (at least in the US). Those are probably the most common ones to use, but you can also make sprouts with other beans and seeds including lentils, peas, alfalfa seeds, chickpeas and others - the sky is the limit!

What does the banana leaf do for the sprout's? I only ask because I don't think I will be able to get a banana leaf so what else could I use?

If you have any Hispanic stores in your area they may have frozen banana leaves. I’ve seen them at Asian stores too.

It only works to keep the bean sprouts' roots from sticking to the sack. Easy to harvest. You can replace it with anything
