Médula: something like the upper part of the spinal cord. When cooked, médula looks something like fat macaronis, but the texture is soft and the taste is mild. I have had it in delicious, differently prepared soups, once in Chihuahua, and once in Cholula.

I love these videos. Have watched tons of them. Almost all!! For a long time. The show has not got old. I can’t stop watching these shows because this guy is doing exactly what I want to be doing but am u able too. And I love his introduction voice it’s classic at this point !! Honestly Trevor i have a hard time watching these videos. I live in Copenhagen Denmark and miss authentic Mole so much and when you show that close up my mouth waters so much. The last Mexico video you made i paused it at the Mole Close up's and then skipped past them. As i write this i am currently making homemade tortillas with my 3 year old son, refried black beans, Mexican rice, and Pico de gallo, but unfortunately Mole is a LONG RECIEPE of ingredients i just can't get here. I can always get jarred condensed Mole that you mix with Broth and it's fairy good, but unfortunately i have not had the time to order any lately and have been without it for 3 months. Your video's are great and the quality consistently improves, but you need to tone down the mole close ups. Cheers from Copenhagen to you and ting. Ting actually means "thing" in Danish and i always think that when i hear her name. My so also enjoys watching your video's which is perfect for a young half Mexican and Half Danish toddler who has never been to Mexico. Be safe and have a good one.
