I've been experimenting with saline in the last year, and I've found that it elevates almost any cocktail. Flavors just seem more vibrant, like increasing the saturation of a color. But the effect is especially noticeable in spirit-forward stirred cocktails. Absolute game-changer with a Manhattan, Rob Roy, or Churchill.

It took me a long time to start adding some to classic cocktails. Maybe by classicismI don't know. But now I want to try it in all the classics to see which works better with it.

Agreed, 100%! It enhances flavors in a really noticeable way. Citrus-based cocktails really benefit from saline also, but you need to add a larger amount to really taste the effects.

@@brianbay3229 Six eye dropper drops of 10% saline solution is my go-to. When I mix with a weaker spirit, like Jack Daniel’s Rye, I’ll back off to three or four drops.

I’m going to add this to my Kenyan cocktail Dawa. Think with the use of honey in the drink it will enhance it. Salted honey is delicious.

Love it. I tend to break up by bitters going with 2 dashes Angostura and 1 dash Peychaud’s, just to add a bit of anise flavor.

I only usually just add 1 drop... but using an 80/20 solution. Doesn't 6 drops change the flavor drastically?

I think one drop is not enough. For me 3 is the minimum. At 6 you do get the taste of it but like I say, it's highly complementary so I like that. It adds a layer of flavor rather than just making the other pop.

If anyone's looking for a really interesting rye, look to Australian offerings! Rye's a really underutilized grain there, so they've got some interesting varieties that carry more flavour than most of what's grown in North America & Europe (mostly varieties bred for yield etc), and it comes through in the bottle.

Also, I've been making an OF riff with a peaty scotch (used to use Laphroaig 10 when I could get it for less than $90/bottle before taxes, sigh) and a salted maple gum syrup. Found a lemon twist to be better than orange with those flavours, too.

Interesting idea! I know a bunch of folks add saline to quite a few different drinks as it adds, like a sprinkle of finishing salt on some dishes, a pop of flavor-enhancing brightness. I'll give it a go, but I still am a fan of going rich and sweetish on this drink, with a bit of the syrup from the Luxardo Maraschino Cherry jar added to the Demerera. Cheers! Salud!

First time I realized how much of a difference a bit of salt makes was when we composed a variation on the oaxacan OF... been a big fan of putting a tiny bit of salt in everything ever since. Saline drops will def make it easier to get consistent results =)

Me too! Ever since someone said, what salt does for food it also does for a beverage, and to go ahead and put a little salt right in the drink, if you don't want a full salt rim. Currently using a grinder with sea salt, oregano, parsley, basil, marjoram, and thyme. Find that it goes especially well with gin and tequila cocktails. Cheers from Indiana!

A dash is a dash. He is using a Japanese bitter bottle which puts out half a dash at a time so two of those equals a regular dash.

10% Saline is actually 10g of Salt in 100g of Water. You made a 11.11% Saline Solution. There is a negligible amount of volume displacement when you’re adding salt, so you’re not making a true total of 100g of Water.

Don't get me wrong. There are PLENTY ways to make delicious Old Fashioned. This is for my "classic old fashioned template. Black walnyt bitters is super tasty in a OF.

I think I have said it before, but I'll say it again: If I were forced to drink just one cocktail for the rest of my life (not gonna happen, but IF...), it would have to be the Old Fashioned. Primarily with whiskey, but any other variation too. And yes, so much yes on the saline!

Someone once told me "The best way to drink whiskey is however the F you like it... period". This seems to apply here as well. Classics are great in all but in the end, you're drinking to enjoy the drink. So, altering a cocktail to make it more enjoyable to you seems like a no-brainer.

Haha - I am getting directly offended - what a great introduction - love it. On the history - I think you are way off. This is your subjective reality (...) but given, that in 1806 the cocktail was documented (and very likely it has been served most of the time as Rye cocktail) - it is. stretch to just base “history” on the documented recipes we have found today. Ok what I like is the reference to Rye and to the point that it is 100 proof (50% abv). This for sure makes a difference! About your Demerara syrup: it is very controversial. I think from a flavor perspective it is interesting. However I just cannot feel 100% comfortable, because of molasses in the mix. But this is me being overly classicist. What I usually don’t recommend is a) the dashes of angostura. Most old fashioneds have too much angostura. That’s why I love the use of a fully saturated sugar cube. Another thing: using a big jigger for measuring ¼ ounce - not consistent. Furthermore the normal “stirring a cocktail” procedure is also not great. I feel it is always under diluted. I am adding 2 ice cubes (Hoshizaki) with 20ml stir and repeat 2 more times. My Old Fashioneds always came up better than any others. Saline solution? To be honest I don’t necessarily use it always for an Old Fashioned - but if you are using plenty of bitters, it will balance everything out. Overall great idea. Overall - your introduction was not necessary. I have seen far worse Old Fashioned procedures and this has been considering quality. I appreciate it. Only the history - this is a bit off. --- By the way- Old Fashioneds are perfect to batch. I would first of all make the perfect Old Fashioned and calculate the how much whiskey I used, to the other ratios (inclusive measuring the diluted water, bitters, sugar). The water is perfect in the freezer and can be poured on top of an ice cube with virtually no quality decrement.

6 drops of 10% saline?! damn, I generally use a 20% saline for all my other cocktails and I feel more than 3 drops is a loooooot.

Its surprising to me how unappreciated and controversial saline is for cocktail folks. It seems like such an obvious addition -- hard to think of any food that isn't improved by a little salt. Hard to imagine why cocktails would he any different.

When I try cocktails with saline solution, I go one drop at the time until I feel I hit the perfect spot. The 10% gives me more precision the get there. I honestly don’t see any benefits of then making a 20% to add just 3 drops because sometimes, in other cocktails, I’ll add 5 drops of 10 % so …
