I make homemade marshmallow fondant all the time. It's an easy fondant recipe and tastes so good! This technique I now use ensures that I have no lumps and produces a smooth fondant that is easy to work with when cake decorating.

@KarolynsKakes

I add it to all of my fondant, if I'm covering cakes with it or if I'm using it for decorations, it all gets Tylose powder. Fondant that I cover cakes with needs less tylose. I explain in this video at 9:22: kzbin.info/www/bejne/nnaqo3l-aKagjtk

Hey girl, thought I would give you a couple of tips, since you are always giving us tips. When I sift my powdered sugar I use a tablespoon to just stir it around the strainer. It makes way less mess than if you shake it. And you can smash all those little hard clumps of sugar up with the spoon. I've actually found that I can save clean up time if I do it this way. Second tip, use a measuring cup to add it to the mixer. One like you use to measure your shortening. Much faster than a tablespoon. Maybe this will help you. Thanks for another great video. One of these days I'm gonna try your fondant recipe. The kneading intimidates me lol. By the way, I tried your method of measuring my straws with the sewing ruler. You rock I ain't ever going back, love it. It works perfectly!!!

If it's too soft, you may need to add more sugar. The sugar to liquid ratio isn't rigid, it's always changing depending on humidity. If the fondant isn't forming around the hook in the mixer, you'll need to add more sugar until it does. (Just add a little at a time!)

How much tylose did you add? And if it was crumbly, you may have needed to add more liquid when you were making it. Remember the liquid added varies depending on how dry or humid it is outside. You really have to look at it and see if it's the right consistency. Was it on the drier side when you took it out of the mixing bowl?

I go through so much of it, that I haven't had to store it longer than 3 weeks. I keep it wrapped in plastic wrap, place that in a ziplock bag, then put that in an airtight container. And it has been fine. I use the fondant in humid weather all the time. If you refrigerate your cakes in the warm / humid weather, you MUST control the environment where the cake will be. Meaning, I keep my house and car air conditioning ON BLAST when I'm working with cakes so they don't sweat. Here's a video where I explain that! kzbin.info/www/bejne/rHOummCFbNtsbtk

If it's sticking, I would add a little Gum Tex / Tylose powder to it to help the fondant stiffen up. If you already did that, roll out the fondant and let it sit for 15-20 minutes before you use the stamp. You can also take a small paint brush and brush a very light coat of shortening on the stamp before pressing it into the fondant. (Don't use too much shortening! Just a tiny amount.)

I must be doing something wrong. I added the water to the bottom of the mixing bowl and then added the sugar, but when I mixed the sugar and marshmallow, the sugar on the bottom that went in the water was like a rock. I had to scrape the sides of the bowl while mixing too, and my fondant had hundreds of tiny lumps through it. This has happened twice. This time I used a spoon to crush each lump and it too hours. There will still be lumps I missed. I couldn't throw it out. Argh. I am using pure icing sugar (in Australia). Should I be using an icing sugar with additives? I'm going to make a small batch to experiment. My grandson's cake is due in one week. The fondant coloured up perfectly however, black and red, so there was some positives. Appreciate any help.
