If you can, purchase the book Biblical Walk Through the Mass by Edward Sri. It’s not only very easy to read (unlike some books on Catholicism that’s weighed down by big theological words), but it covers everything that most Catholics don’t understand about the Mass today. After reading that book, I never sat bored at Mass again.

The eucharist becomes the body of Christ thru transubstantiation. The priest asks the holy spirit to come and bless these gifts as the priest says the same words as Christ did at the last supper. You have to be leave and have faith in the mystery that takes place. Just like the immaculate conception and many other mysteries. Also, how can one deny or explain all the Eucharistic miracles that have taken place through the years.
