Using the U.S. Federal Census

I have been trying to find a census for my 3rd great grandfather Joel Maze, Mayes, Mays. Married to Rachel Smithy, Smitty, Smith. Believed to be born in North Carolina around 1800. He is believed to have died around 1850. Rachel was on 1850 census along with some children and I believe one of her parents. Joel was not on that census. I have been searching on and off for several years. I get frustrated and stop then pick it back up .So here I am again with an effort to find him. My goal is to find out where he is buried and also to find out his parents names. Of course I would like all of his details like birth date, death date, marriage date and so on but would be happy with any information. Any help is appreciated! Thank you!
