• ചക്ക അട നിങ്ങൾ ഇങ്ങിനെ... - Chakka Ada
• വാഴയില കേടുകൂടാതെ സൂക്... - How to preserve Banana Leaves

Ingredients
Roasted Rice flour -1cup
Boiled Water -11/4 cup
Salt-
Coconut -9tbsp
Cardamom Powder -1/4tsp
Salt-
Jaggery -2 or Sugar
Water -1/4cup
Banana leaf
Method
Take 1 glass of roasted rice flour in a bowl. Add 1 ¼ glass of steaming hot water. Add according to your rice flour. Add salt to the water before mixing. Knead it to a soft dough. Close it for 10-15 mins. The dough would have cooked. Knead the dough well.
Take a kadai Add jaggery syrup and allow it to bubble up. Add the grated coconut crushed caramom powder, cumin powder (optional).Add a pinch of salt.Adjust the sweetness according to your taste.
Take a banana leaf. Take a ball of dough and spread it on the banana leaf. Wet your hands in between while you are spreading. Excess dough you can scrape off (watch at 7:18). Add the filling in the center. Fold both the sides. Then steam the ada. Steam for 10 minutes. Cook on high flame. Open the banana leaf when it cools down and remove the ada from the leaf.

വാഴയിലയാണ് ഏറ്റവും നല്ലത്. അത് ചൂടാക്കുമ്പോ Anti Oxidants release ആകും. ഇല ഇല്ലെങ്കിൽ ഇഡ്ഡലി ഉണ്ടാക്കുന്നത്പോലെ തട്ടിൽ ഓരോ കുഴിയിലും കുറച്ച് അരിമാവ് പരത്തി അതിൽ stuff വെച്ച് വീണ്ടും അരിമാവ് വെച്ച് മൂടി steam ചെയ്‌തു എടുക്കാം. കണ്ടാൽ ഇഡ്ഡലി പോലെ ഇരിക്കും. If there are no banana leaves then make it like Iddali with the sweet mix stuffed inside.

Somewhere along the way I recall having these pancakes with sweet fillings..but certainly not the thinned/leaned out "trembling" ones ! That skimming technique to thin the dough down is certainly a eyebrow raiser n a surefire double thumbs up ! Truly, balancing the sweet fillings is the other fine art in this. The "OMG ummm" purring in the end is the innevitable result to such perfection ! And yess..the slicing along the leaf ribs makes for easy bites too ! First time commenting on your recipes. Here’s a suggestion for you. I follow our families method of spreading the dough. Instead of a thick dough that you have to spread by fingers, make the dough a bit loose (like thick idli batter), pour a spoonful on to the leaf and rotate the leaf as you would for making appam so that the batter is evenly spread on the leaf. The coating then comes evenly thin and soft, better than the one spread by fingers. Give it a try 😀
