Ingredients:
Brinjal / Eggplant - 650g (I am using a big one here)
Grated coconut - ½ of a coconut / 4 handfuls
Green chillies - 2
Onion - 2 medium (Finely chopped)
Garlic - 5 fat cloves (Finely chopped)
Curry Leaves
Dry red chilly - 4
Mustard seed - 1 tsp
Turmeric Powder - 1 tsp
Salt
Oil
Steps:
Wash and roughly cut the brinjal into small pieces.
Add salt and mix well using hands applying some pressure. Keep aside .
Squeeze out and discard the water after 10 minutes.
Crush the grated coconut and green chillies in the mixer without adding water.
Heat oil in a pan. Splutter mustard seeds.
Add dry red chillies and curry leaves.
Add onion and garlic.
Once the onion becomes soft, add turmeric powder and saute well till the raw smell goes.
Add brinjal and mix well.
Add coconut and mix thoroughly.
Cover and cook on medium flame for 5 minutes.
Stir occasionally.
Once the mixture is dry, switch off and serve brinjal thoran with rice.
