I am of Indian heritage but was born in the Caribbean.I remember my mother making the same thing but she steamed it instead of frying it.I still eat it but I just fry the karela with all the necessary ingrediants,I then eat it with dhal and rice.After living in Trinidad for so long,(my forefathers left India in the mid 18th century),we still retained some Indian culture.I will now do the karela the same as you did.

when I was a little girl I did not like it, Now I love it. In Tamilnadu we make "pitla", cooked with dhal and tamarind sauce. In masala TV, after making the stuffed melon the way chef makes it here, they cook it further in a yogurt plus spice gravey. I make thein slices, salt, sun dry and, then sau'te it with red chili powder. It is frying but with very little oil. It tastes good

Hi Sanjay, I cook this dish very regularly, Karela being one of my favourite vegetable. I see that you are making it the north Indian style (right?) but we always add a lot of saunf. Without saunf I think it will not have that special aroma and flavour. Please try it. :)

@derubala I agree with you. just microwake for 2-3 mins and use very little oil in pan and just keep those karela. Ytou can use just 1 tbs of oil that's more than enough.

vidalia onion, all the scrapping and inside of stuff of karela, chop and blend in food processor. with vidalia onion you need no sugar. add til, coconut, amchur, salt, paper. May be few minutes in microwave before fry will help too cook fast! That's how I cook!!
