Vaingyache Bhart | Goan Style Baingan Bharta | Easy Oven Method for NRIs
Ingredients for Vaingyache Bhart :
Eggplants or Baingan - 2 Big Variety
Onion - 1 cup chopped
Grated Coconut - 3/4th cup
Green Chillies - 4 or to taste
Tamarind pulp - 4 tspns
Salt - to taste
Cilantro/Dhaniya - As needed
Oil for coating eggplant
For the Oven:
Pre-heat temperature 400F/200C
Cook time 400F for 45-55 mins depending on eggplant size. Turn eggplant once in between carefully.
Alternate cook methods:
1) On Open fire
2) On wire rack on Stove
Recipe listed serves 10 people. Please halve the recipe for 4-5 people by using 1 eggplant.
