Made this last night with some pork stir fry. I didn’t have sake but I added more rice vine vinegar and touch of soy sauce as substitutes for dash powder. Omgawd it was soooo good. My son and partner enjoyed it so much. Thank you!

Thank you for this recipe! I just made this and it is highly addictive. Even my boyfriend, who usually doesn't like aubergines, loved it! However, I highly recommend using butter instead of canola oil!

Recipe and the video quality was on point. One thing to note though: Dashi powder contains fish. Swap that out for kombu dashi powder for a real vegan recipe. That being said i'm surprised you don't have more subscribers. Great content.

Attention: Not all dashi powders are vegan, the stronger ones are generally made with bonito flakes, dried sardines and such.

You could anything you want with it. But usually when we make it at home this would be instead of a meat dish. But it would go well with some meat as well. If I can suggest you I would say, fish with rice and the eggplant would be perfect together. Enjoy 🙏

Why do you cut the vegetable and then soak in water? Does it change anything?

Can't we omit the frying step and just bake them in the oven and then put the glaze after it gets brown? I'd hate to use all that oil.

You can for sure. It won't be exactly the same as it might be a lite dryer. But I'm sure it would still be delicious. Just make sure to drizzle them with some oil before baking at least 👍
