Made this last night with some pork stir fry. I didn’t have sake but I added more rice vine vinegar and touch of soy sauce as substitutes for dash powder. Omgawd it was soooo good. My son and partner enjoyed it so much. Thank you!

Excellent recipe !!! I couldn’t find dashi powder so I used a bit of veg stock cube.

I had this similar dish at Yellowtail restaurant at Bellagio in Las Vegas. This recipe….is pretty much the same ingredients used. Can’t wait to make this soon!!

Thank you for this recipe! I just made this and it is highly addictive. Even my boyfriend, who usually doesn't like aubergines, loved it! However, I highly recommend using butter instead of canola oil!

Wow, this created the tastiest eggplant that I've ever had. You don't point which miso you used, I did it with red miso (yours looks red too, but I'm no miso pro). Excellent! Thank you.

Recipe and the video quality was on point. One thing to note though: Dashi powder contains fish. Swap that out for kombu dashi powder for a real vegan recipe. That being said i'm surprised you don't have more subscribers. Great content.

Attention: Not all dashi powders are vegan, the stronger ones are generally made with bonito flakes, dried sardines and such.

Love the way you explain every step!! I'll try it very soon. What protein would go well with it though? Fish, beef, or no protein needed at all?

You could anything you want with it. But usually when we make it at home this would be instead of a meat dish. But it would go well with some meat as well. If I can suggest you I would say, fish with rice and the eggplant would be perfect together. Enjoy 🙏

Omg can’t wait to wait to make it! How well will this transport? Can I do the pan frying ahead of time and bring it to holiday dinner and finish with glaze & bake? Or better to do it all and reheat? TIA!

Why do you cut the vegetable and then soak in water? Does it change anything?

It helps prevent the cut eggplant whites from darkening (oxidizing)

Can't we omit the frying step and just bake them in the oven and then put the glaze after it gets brown? I'd hate to use all that oil.

You can for sure. It won't be exactly the same as it might be a lite dryer. But I'm sure it would still be delicious. Just make sure to drizzle them with some oil before baking at least 👍
