I just made both chocolate and vanilla versions back to back, because I had 8 egg yolks left from a Swiss meringue recipe. Both puddings came perfectly done, exactly as described and shown. They are delicious! I will never buy another boxed, processed pudding ever again. These took minutes to make. Thank you Ms. Lindsay Strand!

Made this. Used corn starch because there’s no corn flour where I live. Had to keep stirring and stirring. TAKE NOTE you need to stir a lot for quite awhile when it’s on the stove , at least 20 minutes otherwise it won’t thicken , I got worried when mine was not thickening and realised you need to keep whisking continuously. Once it became super thick I let it off the stove and added vanilla essence. Didn’t add butter as I didn’t have any. Wrapped it with clear plastic and have now left it in the fridge for 2 hours. Will update on how it turned out soon!!

I made this while watching ( rewind multiple times) and did exactly as you did. I started not to strain but so glad I did because you cannot see those bits of egg. In the refrigerator now. Tomorrow 😃😃😃

Hi Lindsay:this chocolate pudding recipe you just demonstrated how to make, absolutely looked so delicious. I liked the idea where you used just a few cubes of cold butter and, when you added the vanilla extract in there. It just showed that, both of those ingredients gave the pudding a great depth of flavor. By the way, I'm also a huge chocolate fan just like you. Keep up the good work Lindsay.

Without the yolks it won't thicken, so you'll sadly end up with a thin and runny pudding... :o) Hope it answered your question

You could use a vegan egg substitute powder like; "ener-g egg replacer" or "Bob's Red Mill egg replacer."

Kathrine Pandell My family just used cornstarch to thicken it. You had to use way more than she used here. It turned out OK, however I have had problems with pudding separation after it has sat in the fridge, maybe the egg prevents that. I'll bet the egg version tastes better too! Edit: we also didn't add butter, I need to make this version!

Searece Talent You may like it frozen. Make just as she did, then add to a popsicle mold. Frozen pudding melts in your mouth like ice cream. Jell-O sold _Jell-O Pudding Pops_ in the early 90’s that were delish.

Why use a pot with no handle? LOL, touch them first to see if they're too hot. In other words don't use a pot with a handle even though they make those, use one where you have to test to see if you are going to get a third degree burn.

That's the thing, there's no difference that I know of. Same ingredients, same method... she didn't temper the egg yolks but a lot of people do it all in one pot. It's a chocolate flavoured custard or (pastry cream).

I add eggs yolks too, but cornstarch is the main thickener.
