The method I used for baking this cake is easy to follow
This is a very tasty cake with great texture.
You can use 3/4 Cup oil or butter
Instead of 1/4 of a cup each of butter, oil and cream
I used in the recipe.

RECIPE:
Prep Time 15 minutes

Makes one 8 inch cake
12 servings
Ingredients:
5.5 Ounces all purpose Flour in weight [or 1 ¼ Cups lightly measured]
1 Tsp baking powder
½ Tsp salt
3/4 Cup granulated sugar
For the batter
1/4 Cup sugar for the egg whites
4 large eggs at room temperature
1/4 Cup unsalted melted butter
¼ Cup oil
¼ Cup cooking cream
2 Tsp vanilla extract
Instructions:
Preheat the oven at 320 degrees Fahrenheit ten minutes before baking
Grease and line an 8 inch round cake pan
Measure and prepare all the ingredients first
By sifting the flour
Add the baking powder and salt to the flour
Mix well to combine set aside
Whisk the eggs and sugar together for 5 minutes or until it turns light and pale and have a ribbony consistency
Divide the egg batter in half [set aside]
Mix the liquid together in a separate bowl until well combined set aside
Add the flour into 3 additions in half of the whisked eggs
Starting with a little flour alternating with the liquid into 2 additions m.
Then incorporate the whipped eggs in three additions along with the vanilla extract
Mix lightly until all the ingredients are well incorporated
Pour the batter into the prepared cake pan/ tin
Place the pan on the middle rack of the oven
Allow the cake to bake for 45 minutes
Or until it’s finished and when inserted a toothpick it comes out clean
Let it cool in the oven for five minutes before taking it out
Allow the cake to cool for ten minutes in the pan
Then place the cake on a cooling rack to cool completely. Once cool completely serve and enjoy
Keep it in a cake caddy
It will stay fresh for up to three days.
Notes:
Don't open the oven until the cake has fully cooked , the cake will become dense
All the ingredients should be at room temperature
Measuring the ingredients and handling the cake batter the right way is very important
Mixing lightly works best
to have a soft spongy textured cake rather than a dense texture cake
The oil and cream will add moistness to the cake
And the butter will add added flavour.
