Hello. Thank you for your recipe. I've made it today for our coffee/tea time. It turned out very good! soft and moist. I reduced a bit quantity of sugar and oil, and add more shredded dry coconut and diced fresh coconut meat, they're giving more texture in the cake. The whole house smell good! Have a good day John!

I followed your recipe yesterday and it turned out really great! My husband and I enjoyed the cake so much. I used coconut oil instead of vegi oil, and I put coconut flour instead of desiccated coconut (I doubled the amount - put 60g instead of 30g just because I love coconut taste and as an experiment, and it turned out nicely!). I will definitely use your recipe again! Thanks for the great recipe!

Hello John, the cake recipe here is delicious. I made it the first time using exactly your recipe and it was soft and delicious. Thank you. The next time I did it, I used 30 gm of extra virgin coconut oil and 135gm vegetable oil. The result is a strong coconut flavour, very very nice. Thank you.

A lot of people have made it with 100% coconut oil Lynette, when I tried it I found it way too strong, looks like you hit the nail square on the head by using a small percentage, 20% I think it'll work out at, nice job my friend. I made this yesterday and feel so grateful for having found your video. Never have I baked a cake this way. I just substituted sugar with jaggery powder, even then they have turned amazing. One question please - if I need to half the quantity next, will I need to exactly divide everything by 2...like baking powder will then be 1 and quarter TSP?

Yes you can halve everything but it will be a very small cake, better to make the whole thing and freeze what you don't use.

Hi. I came across your video. I like this video as it is so simple. I baked one for my boyfriend on Thursday, as it was his birthday, and it came out so good. It got a bit tricky with my gas temperature though, so it baked a bit too long. But it tasted so good. Thanks so much
