It is because Tamil movie fans have a certain level of expectation from each actor. For instance, they don't expect Vijay or Ajith to act liike Kamal Hassan. They also don't expect Kamal Hassan to do a mass masala entertainer. Because of this, most Tamil actors have no pressure on them to try something different or to improve their acting skills. They deliver exactly what the audience expects from them and they mint money. In Tamil Nadu, movies are purely for business and politics. If you want to watch realistic movies, stop watching the movies of lead actors in Tamil and look for low budget hidden gems. Personally, I am not in favour of giving this "rakshakan" tag to Vijay alone. I see no difference in the movies made by most other lead Tamil actors. Forget about Tamil, any other movie industry is the same. If there is a Hero in the movie, he is obviously going to save someone from something.
