Vattayappam is basically rice and coconut grinded together and fermented with yeast. it is very soft and fluffy a slightly sweet snacks. Here I skipped yeast and make with little longer fermentation. Hope you enjoy this recipe.
Ingredients:
Raw white rice(sonamasoori) - 2 cup
Fresh coconut - 2cup
Rice flakes/thin poha - 1/3 cup + 1/3 cup water
Coconut water - 1/2 cup
Salt - 1/2tsp or to taste
Sugar - 1/2 cup (or less/more)
Cardamom - 4 -crushed
Water - 1.5 cup

This is so cool, I would love to see more naturally fermented Indian/Asian options, especially because nowdays the majority of people prefer to use baking soda, baking powder or sparkling water. Thanks for sharing it!

In fact in traditional Indian cooking we do not use baking soda, yeast,at all.

@@bhusanur.cooking I left the batter to ferment overnight, but as I live in a cold climate, it hadn’t fermented. I steamed a little anyway and though it wasn’t fluffy it tasted pretty good. I left the rest of the batter to ferment longer, but it over fermented and tasted too sour and had to throw it away. Anyway I’m gonna try again with better timing next time. However, both the times I steamed them, the cake turned a little reddish. No idea why??

Thanks for trying it out😊. You can keep the batter for fermentation in many ways(in winter). 1. oven with light on for about 8-10 hr. 2. Instant pot with yogurt mode for 10 hr. 3. Place them in a wooden chopper and cover it with a thick cloth and big vessel for about 8-10 hr. so on. Try it out any of these suitable for you. Once the batter fermented you can store for 2 -3 days in fridge. Thank you😍
