So great to find your video while looking for a cornbread recipe! Who knew I would enjoy such a charming, vivacious chef reminding me of my trip to Trinidad over 33years ago. I made this yesterday for Christmas, and dammnnnnn it was seriously good. I will be making this very often! Next time I will swap the pimento for Madame Jeanette chili, which is close to a Habanero. I am also thinking of adding vegan chicken cutlets (stir0fry them first before adding. I wonder what it would taste like if you add some picalilly for a bit of acidity? Can't wait to find out!

I made this for the first time using your . However, I used some cooking butter and oil at the beginning. I added cheese on top at the end. I didn't have celery and I thought it would have affected its taste. However, it was delicious. I offered a slice to someone who hated corn pies and he said it tasted delicious. Its the best corn pie he has ever had.
