This is a great video. THank you. FYI,When I need a substitute for 4 eggs, I have been using a combination of 2 flax eggs and the a 2 egg equivelent of baking soda and vinegar. It has always worked for cakes and cookies.

So many options! I've only ever used applesauce and flax eggs. Sometimes, I use both - flax for the eggs and applesauce for the oil. I don't bake very often, though, so I don't need too many choices.

Flax seeds: great for binding but not so much for leavening (giving lift to food) Carbonated water pretty decent at providing lift and doesn't have thickness or consistency or egg What if we took the 1 Tbps of ground flax + 3 Tbps of water and instead replaced water with carbonated water?

You have to remember that flax egg is meant to be a binder, whereas carbonated water is supposed to be a leavening agent. Combining these 2 ingredients can dilute their effectiveness. Flax egg needs time to set up and thicken, it's also heavy due to its fiber content, so the time needed to thicken and the weight of the solvent can dampen the effects of the carbonated bubbles. Carbonated water needs to be combined to your mixture directly, so that the bubbles can act on the recipe immediately. Make your flax egg with water or any other wet ingredient you might have (milk, juice, sauce, etc). Then apply the carbonated water separately. Keep in mind that carbonation doesn't work in grain-free recipes.

I loved this! Very helpful, especially knowing which pantry items to use. When it gets snowy out it’s nice to have an arsenal of things. Question, can the silken tofu be frozen?

It can be! We recommend for this that you completely thaw it before using. Another tip would be to slice the block into 5ths as that is about 1/4 cup and then freeze so you don't have the thaw the whole package at once

Ahhh! It's sooo easy to make your own applesauce! Please update your advice on that option. Peel and core some apples, cut them up into small chunks, throw them in a saucepan with a little bit of water. Viola! ~15 minutes later, you have applesauce!

I grind more flax and chia in my coffee grinder than I do coffee! When you grind it super fine, it eliminates a lot of texture issues that those whole ingredients create. There is a way to separate the fiber of flax and chia from the gel protein if the confection is not hearty enough for it such as birthday cakes and things.

Hi folks, My ears perked up when you mentioned the cost of plant based yoghurt. I can make a quart of Oatmilk based yoghurt for about $1.00 per quart. You can even make it vegan by starting the initial batch with green, or red peppers. I used Jalapeños and it worked great. Had a fruity taste rather than hot. The fruity flavour has faded in subsequent re-cultures.

Not all the ingredients you mentioned have leavening qualities. The items you mentioned that have leavening qualities are baking soda and vinegar and I suspect aquafaba. The great thing about eggs is that it provides all three qualities - moisture, binding and leavening quality whereas some of the foods you mentioned maybe only one or two.

I buy the little pots of apple purée because when I have bought jars I end up throwing it away as it goes mouldy in the fridge It isn't ideal but it is better than wasting it. I also mix sparkling water with the chickpea flour in pancake batter as it does make it fluffier.

@@tamcon72 I have been rereading Lillian R. Lieber who wrote several books in the 1940s on topics like Einstein's theory of relativity (and not just the easy stuff). She wrote in an interesting style and a note in the preface says: "This is not intended to be free verse. Writing each phrase on a separate line facilitates rapid reading, and everyone is in a hurry nowadays." Plus I am doing research in free verse. Personal research on how it works. As well as practising the ideas for myself.

The only yogurt I like is Silk. I've tried the others like Kite Hill and Forager and am not a fan. I find that the flour is always not a 1:1 and can change the texture. Aquafaba makes a great meringue. Great video. Thank you. When my baked goods fail. I run to Whole Foods. They have delicious baked goods always :)

I'm trying to use aquafaba to replace a meringue used in a gluten free chocolate cake recipe (Claire Saffitz' Flourless Chocolate Wave Cake). I've tried twice now and the cake just doesn't... cake. It's like a soup almost. It will rise like it's supposed to but then it deflates and is mostly liquid... help?

We have tried so many "egg" substitutes-not one of them has worked to our satisfaction. My daughter is the most awesome baker. Before us going vegan, her cakes and cupcakes were so light you would have to hold on to them or they'd float away. Now, they are always heavy and unappetizing. What can we do-chia egg, flax egg, applesauce dont work.

Very helpfull, I'm the guy that starts a baking project the realize I only have one egg left, or none. Doing the flax seed egg right now. 👍
