Love this stuff! My favorite food is Ethiopian, but I've never been able to make it myself until I discovered teff. I just make flour by putting the teff in my BlendTec. Amazing and delicious food.

We Bengali make pancake like your one above with rice flour. we just use fingers and with fingers throw batter on the hot skillet or Chapati making pan(Indian way) with no oil even and it become like a net like pancake and ate with meat products mostly and that is eaten occationally(not me anymore) . I have gluten problem and suffered with gas and heart burn and high blood pressure I think due to gas and also other problems for long time and 6-7 years I found that I have gluten problem and found myself. I saw some foods in store written gluten free and then I googled and found what is gluten. I thought I will stop eating bread in the evening or in the morning and when I stopped for 3-4 days and my all those problems all gone. I did a test, but did not find anything, because I already stopped to eat wheat and Barley products. My working buddy was from Ethiopia and all the time ate Injera made with Teff flour. Today I went to local Ethiopia shop after watching your video. In other videos I saw use yeast and baking soda etc. I don't want any additives with the pancake or bread and yeast cause problem too. The shop owner is selling ready made Injera too, but he told me that he mixed with self-raising flour, because teff flour is expensive. So, I bought 1Kg teff flour, 1Kg Sorgom flour and 1kg Millet flour and came home and made batter mixing with 3 flours. I have all utensils like spray Bottle USA made(not used for years) . I had Iron skillet too by La Crusset and French Copper pan, but I use regularly Ceramic coated eco friendly fry pan for several years and it works good. I like too cook and cooking for 40 years for myself and my family and I divorced long time and still cook all the time for myself and my daughter , when she visits me every week. She like my food than her mom(mom from Russia and eat mostly russian or Georgian style Kavkaz food). We eat rice 2-3 times a day and my belly getting bigger and trying to go further and switch one or two meals with gluen free bread and pancake homemade. thanks for Video

S Gonzalez Researchers say that millet as a staple food causes thyroid disorders and goiter. Compounds known as flavonoids in millets are responsible for causing iodine dysfunction and may in turn produce goiter when consumed as staples. My staple food is Rice, without Rice do not feel right due to habit eating rice since childhood. I used several times for evening meals and it doesn't take time. I bought sorgom, teff and millet flowers and mix them together and make chapati , tortilla style bread. With only teff you can't make bread(injira), because it doesn't holdup together. I saw the Ethipian shop is selling Injira made with teff and self rising flour and it costs Cheaper than pure teff(expensive).

Teff is from Ethiopia and you can find it in any Ethiopian store near to you.

You need to cover it to let that top cook faster. That's the original teff is cooked as injera,which the steam will cook the top.

thank you for sharing the video, as an ethiopian I eat enjera(the flat pan cake ) my entire life like in every dish and to be honest I enjoyed it most of the time but never tasted in the form as depicted in the video, very excited to try it. but two points- have ever tested enjera in local ethiopia restaurants and have you considered to add entrepreneur idea and commercialised your cakes? thanks
