If I'm being honest I am not in any way vegan or vegetarian however my best friend is vegetarian and I have her over for Thanksgiving last year and I made both of these recipes and she loved it and I have to admit it was really good

Wow, that butternut! I made only one, without the processed cheese, and we had half for dinner. The rest I blended up with miso, used half of that for your pasta alfredo recipe, and the rest (with some agar agar) makes a lovely sandwich spread/vegan paté. Thanks so much for the recipe!

Two really amazing tasty looking dishes. Thank you! For a gluten free grain that has the same chewy quality as farro, I often use buckwheat or pot barley. I cook a whole bag, but then stop cooking just before they’re soft. Cool quickly and freeze in single portions. This is good when you’re feeding only one gluten free person in a household. Just a tip for anyone new to gluten free. Love these inspiring videos 😊

Love the butternut squash recipe. I bake the halves cut-side down to prevent a skin forming on the cut side.

Yum! These look amazing, Nisha! I grew some butternut squash (2 plants gave me 14! Squash!) and they are sitting in my garage. Guess I know what I’ll be making with some of them! I also LOVE farro! And that Alfredo sauce looks AMAZING! Can’t wait to try all of these!

Me and my husband are on a low calorie diet at the moment and we have been looking for meals that are filling, low calories and tasty. Its hard to find them. I made the creamy vegan lentil bake today and im shocked at how tasty it is. But not only is it tasty -its also low calorie, and very filling! My husband is a vegan skeptic and when he tasted it he said, I can definitely live with this if meals will taste like that, and he had a plate. 😆 Also I made the red lentil curry that you posted in another video for vegan skeptics. 😋🤤🤤🤤 - also low calorie and very tasty. So glad I found your channel. Your recipes are delicious.

Hey Nisha, I just made the squash and lentils bake with cashew sauce and just had to write a comment because it was absolutely delicious. Being brown I find your recipes absolutely satisfying. My family was through that bake in less than 5 minutes and they were full of compliments. Happy New Year and stay awesome 😎

These both look great. I love casserole style dishes, so that lentil dish is calling to me. I was also wondering if the butternut squash recipe could be done with a smaller squash, like acorn squash? It would be neat to have a personal squash half for each guest.

I'm glad you like these ideas! Yes, you can use acorn squash - it cooks a bit quicker than butternut, so just keep that in mind.

I think I'll have to use frozen chunks of butternut squash because I can't manage the chopping, but this recipe looks soooooo good it's gone straight to my "Must Make Soon" List! Thanks so much, Nisha. You're making this whole transition to veganism so much easier. I had no idea cashew cream was so simple. The hardest part is probably to remember to plan ahead to soak your cashews!

Nisha, any tips for making either of these dishes ahead of time and reheating them? I'll be travelling to my Thanksgiving gathering and the kitchen will probably be pretty busy preparing non-vegan dishes, so I thought I'd make my main dish ahead and take it to reheat near serving time.

Hi Megan, I mention in the respective blog posts how you can make these ahead. For the creamy lentil bake… all three layers can be made ahead in advance. Then just layer it when you’re ready to warm it up in the oven. For the butternut squash, the Alfredo sauce and Farro can be made in advance as well. You can even pre-bake the butternut squash in advance so all you have to do is stuff/assemble it and bake for 20 minutes when it’s time to serve.

I'm late to the party, but I made the butternut squash dish and I absolutely love it! Does it make me a glutton if I was already sampling the Alfredo sauce before I added it to the squash? LOL. At the end of the week I will be trying the lentil bake. Can't wait!

Made this for the fam for Christmas! It was amazing and everyone loved it. Only small note is that the farro to squash ratio in the filling was off. I followed the recipe amounts but the farro was not as present as I'd like it to be. Delicious on its own tho. You gotta make it

Yes, i'm sure it would be! I like the chao creamery slices (if you freeze them for a short period of time, they're easy to great). I also like the follow your heart mozzarella, which comes in a block that you can grate. They also make parmesan, which is good!

These both look amazing but the lentil bake makes sad. We have literally no miso paste anywhere around to me( I saw a few options at Whole Foods which is an hour away but I had no clue what to choose, totally overwhelmed) do you have any suggestions of what to order online? Xo Davita

Hi Davita! Thank you! When/if you go back to Whole Foods, my favorite miso is the mellow white miso from miso master - it’s a round tub sold in the refrigerated section, usually near the produce. @@helencherry9133 Hi there, I don't think it's mandatory and it shouldn't stop you from making it :) It does add quite a bit of savoriness and saltines so you'll need to season with salt to taste since the lentils don't otherwise contain salt. Or you could try a tablespoon of soy sauce or tamari instead.

You can try using soaked raw sunflower seeds - the taste is a bit different (you might need a bit more of lemon juice) and not as creamy but still should work relatively well. Or hemp seeds (no need to soak if you have a high powered blender). I've never tried these subs in this particular recipe, but have made similar sauces using both.

These dishes look great. Is there a non soy sub for miso. I am allergic to soy.

Hi Anita, for the lentil dish, you can either omit the miso - you can add sea salt because the miso brings in a good deal of saltiness. You could also add some nutritional yeast for the umami flavor that miso paste brings. Or if you can find a chickpea-based miso in your grocery store, you can use that instead, as it is soy-free.

The cashew cream in the lentil recipe is bomb! I just posted my own "bake" recipe, which uses this cashew cream. So good!

Pink Himalayan salt, Celtic Salt or Sea Salt flakes is tops....also make sure that your flour is Organic Unbleached flour, NOT Bleached flour.

Hi there, I mention this in the blog post, but I use a mixture of Follow your Heart mozzarella and Chao Creamery slices and used a box grater (if you freeze the sliced cheese for a short period of time, it makes it easy to grate it). There’s only 1/2 cup of cheese across six servings so it’s not that much - as long as the cheese doesn’t have a very distinctive or too strong of a flavor, I think it will work!

I do love the receipe! A question to the european / german viewers: Can anyone here recommend a vegan cheese, which is a) available in Germany b) does indeed contain some protein (most cheeses I found contain only plant based oil/fat and something to hold it together. @RainbowPlantLife: If you ever come up with a homemade alternative to cheese, I'd be a sooo grateful!
