I made this today eventhough I'm not a vegan, and omg, it's surprisingly SUPER GOOD! Not only it's very healthy but the taste is amazing!! But I suggest that you put salt and a little bit of pepper into the sauce mixture because you don't want to eat it without any salt, and I actually put 1 tsp of honey in it to bring up more flavour of the mustard, also I didn't bake the brocolli before, I just mixed everything together and then baked it at 400F for about 18 mins and it was good to go!

I just made this literally five minutes ago. It smells sooo good! I loved the crunch of the broccoli and texture of the mushrooms! but I would have to agree with @Quỳnh Anh Nguyễn I think it needed a little more salt and pepper. when I make this again I need to remember that. great recipe though!!

This looks good, also Raw Chef Matthew Kenney has come out with an outstanding Vegan Mac n Cheese which I am addicted to, also using Cashews as the base with some differences like using Turmeric as the yellow food coloring plus getting the extra nutrition. I use gluten free brown rice noodles, and I think the addition that I will take from your recipe is the broccoli that looks good!

Try cashews (soaked for 2-6 hours beforehand though) + baked or steamed butternut squash + nutritional yeast :) it makes an AMAZING vegan cheese sauce. Add tahini for a kick of flavor, and garlic, onions, salt, a hint of turmeric... just orgasmic. I've tried the same thing with cauliflower or sweet potatoes (instead of the squash), all amazing.

Sounds delicious!!!!!! I've never made this version of vegan mac and cheese. I use soy cheddar for mine and soy milk. I love vegan mac and cheese, but the dairy mac is gross!!!! thinking of all the saturated fat it has is sick. Thanks! I'll try this.

I love the detoxinista website, just made a "cheese" dip from there which is very similar to this recipe. Sooo good! The ingredients are posted there so u don't have to eyeball it. Not good reheated though, unless u add more water. So eat all in the same day. :-)

Nutritional yeast is a by product of beer brewing.You can buy it in the health food store. it is basically inactive yeast and has a very strong "umami" cheese flavor. Unfortunatly you can´t really replace it. Do you have marmite oder vegemite? They will be close in flavor.

if you're into tofu (which I only sometimes am), it blends well with garlic and nutritional yeast as well as the other ingredients. :-)

To be honest, I was a little nervous about attempting another mac'n'cheese recipe because the last (and first) one I did turned out pretty bad, but do NOT worry! This may taste a bit different than regular cheese, but it was still amazing. I just put the pasta in the oven, but I pretty much ate most of the sauce before it even went into the noodles. I have no doubt that when it comes out, it's just going to be better! One little, itty, bitty, tiny, minty little adjustment that I made was to take out the mushrooms, and instead bake some bell pepper with the broccoli. (I also snuck a taste of the broccoli with the sauce and it tastes amazing!). If I could, I probably would have put more veggies in, but it is what it is. Thank you so much for providing the video. :D Good luck all!

In England a company called Marigold do Nutritional Yeast flakes called "Engevita" I get mine from a Health Food store called the Vegetable Garden near Baker Street in London. I expect some other health food stores sell it, but you can always buy it online.

It's better if they're raw AND pre-soaked (2-7 hours before use). This makes the cashews (and most nuts in general) easier to digest - it gets rid of most of the phytates (anti-nutrients that bind to iron, magnesium, etc. in your body and carry them out). So if you soak, you're getting rid of the "bad" stuff and maximizing your body's ability to absorb the minerals that nuts contain. We should also soak our beans and grains for this same reason. If you're just going for taste though, then lightly roasted cashews would probably be delicious in this recipe. You can also soak your nuts first, dehydrate them, and then roast them yourself.

If you keep the sauce separate in a sealed, airtight container in the fridge, it'll last a few days and will be pretty much the same when heated, though you may need to thin it out a bit with a plant-based milk or margarine. I've been doing my own version of this recipe for a while, and I love it so much that I always make an extra batch of the sauce for the next day :)

You would have to look for another vegan mac n cheese recipe that doesn't call for nuts. The cashews can't be substituted for anything.
