My mom used to make rice crispy treats as well as no bake peanut butter chocolate oatmeal cookies. She would melt peanut butter & chocolate together on the stove & then pour in some oats until everything was sticky. Then she would spoon out mounds onto parchment paper & let them cool in the fridge. Sooo yummy!

I'm from a rural area of the state of Alabama in the US. Shortbread is common here, but it's almost always used as a component, like in millionaires or other layered desserts. Southerners tend to prefer a lot of sugar, and shortbread is too plain on its own for most people. Vegans are very rare around here. I'm vegetarian, and that's quite rare here too.

Hey lads, I would love to make these but am allergic to all nuts and peanuts (I can eat coconut though). Can I use ground sunflower seeds in place of ground almonds and sunflower butter in place of almond butter? Or will it make it taste weird? Please reply :) (Also I'm from Sligo)

Rachel I would try tahini in the caramel instead of the almond butter. Tahini makes great caramel from my experiences. Maybe you can use, as you mentioned, sunflower as a base, or maybe coconut flour?

Not vegan, but I even didn't know what vegan is back then, and just to say, it all was local, we didn't even have shopping malls back then ^^ so the milk used to make the butter was from cows roaming around in the fields :)
