Ok this intrigued me so I had to google it “The origins of this unique mac and cheese are likely rooted in the influx of Italian immigrants to New Orleans at the turn of the twentieth century, which made Italian food so prevalent locally that the Lower French Quarter took on the nickname of the "Spaghetti District." Looks so good I am definitely going to make it!

Hi, NOLA native here. Yeah some people use spaghetti instead of macaroni. It's simply called baked spaghetti. You've probably never heard of it because not everyone uses it. No one in my family, or close friends family uses spaghetti but it is pretty common throughout the city. Any time I've had it was at events like a baby shower or a work pot luck or if someone had what we call "a supper" where someone sells plates. It's just as delicious as using macaroni IMO. I'm just used to macaroni.
